Have you ever tried Hellsing? Watch the OVA's, it's awesome!
Afro Samurai is pretty cool, watch it dubbed and you get to hear Samuel L Jackson!
If you don't mind the insane amounts of fanservice, High School of the Dead is really cool. But seriously, the fanservice is horrendous.
These are all reasonably short series' though, unlike the 300 episodes of Bleach.

I'm currently watching FLCL, Fruits Basket, Cowboy Bebop, Kodomo no Jikan (Second Term) and Spice and Wolf.

Those are all good with the exception of Fruits Basket. It's not bad, it's just rather boring.
I kinda stopped watching after a while.
And Kodomo no Jikan is... well it's one of my favourite anime but it's also something that a lot of people hate due to it's subject matter (IE; 9 year old girl is constantly trying to fuck her 23 year old teacher... in other words, Lolicon)
Though, depending on your tastes, I could go on and on with recommendations for anime. >.>

Hrmm.. I've watched Cowboy Bebop tonnes of times. Any like Edo period animes?
I've been looking at a slice of life one, like Bartender looks fairly cool and average.
Heard anything good on Berserk and Garren-Laggan?

I'm about halfway through Durarara! and its veeeeery good, infact that halfway through was just last night, had to keep watching the next episode. So I'd advise trying to get that.

Also just finished Toradora, which was quite heartwarming to be honest.

Judging from what you're watching now you might like the Naruto anime, along with Ninja Scroll(both movie and series)as well as Ghost in the shell( both movies and series). Other decent shows are Baccano, Durarara, Sengoku Basara and Higurashi no Naku Koro ni plus sequals.
If you let me know what sort of stories you like I'll try and rec you some stuff closer to that.

Gurren Laggan is an epicly epic tale of sheer manly epicness. If you can get past how awesome and fantastic it tries to be right from the get go, there's an incredible story of growth, loss, and challenging the odds.

A lot of the new anime isn't very good, imo, a lot of it being the same harem or highschool romance genres which get recycled every season it would seem.

Ao no Exorcist seems to be good, if for only the first few episodes, I haven't gotten very far.

Deadman Wonderland also looks promising.

for slightly older series I would recommend Pumpkin Scissors, Soul Eater, and Black Lagoon.

... out of everything you just said, I only know Berserk XD
Which is good, by the way. Watch it, if you get the chance. It's not too long I don't think but even still, I think there is a little bit of filler for it >.>

And Edo period as in stuff about shoguns and the like, yes?
Not sure if I know too many like that other than Ninja Scroll which I absolutely hate but tons of people seem to love it.
Oh and while I'm at it, look up Vampire Hunter D: Bloodlust. Very good anime film. The first was okay but Bloodlust (sequel) is far better.

But. Lolicon = good :<
Lolicon does indeed equal good (at least sometimes, like anything else) but Kodomo no Jikan seems to suffer a lot of backlash and has a lot of controversy surrounding it for it's material. I'm not really sure why people chose to pick on that particular anime when it's not even that explicit, but... whatever. It's a good anime still and even though it doesn't have an official English sub/dub, there are lots of fansubs out there that do the job :p

Puella Magi Madoka Magica

Don't be fooled by first impressions and come to the conclusion that this is just a generic magical girl series, the story quickly becomes very deep and dark.

Also watch Baccano! and Durarara!

If you say Beserk is good. I'll have a gander at it. And I'm not too keen on the whole Naruto/Ninja Scroll shit, but I'll have a gander too. I just want a good excuse to burn my 100Gig cap from other than AFK'ing in Org all day.

Angel Beats! eh? Good man.

I wholeheartedly recommend Puella Magi Madoka Magica. It isn't what it appears to be, trust me.

Edit:

Concurred!

And for those that are currently airing, I'm enjoying Ano Hana and Denpa Onna a lot. Maybe you could try those too.

Angel Beats was hard to watch at the end. I nearly cried after every episode at episode 10-ish.

Well if you're not keen on it to begin with, don't watch it. Ninja Scroll is quite a pathetic excuse for an anime and Naruto is just... well complete shit (at least in my opinion. Obviously a lot of people love it).
There are far better anime out there than the 10000000000000 episodes of Naruto which are 95% filler. I'd say avoid it all together to be honest.

Orly? I just want some Edo Period Samurai Animu's
The only thing I can think of in regards to that would be films like Princess Mononoke. Which is an absolutely amazing film that everyone should watch but it isn't a series. Just a film.

Also, Samurai Champloo might be something you'd enjoy. A bit long though, if I remember correctly.

I have been recommended Gundam so many times and rejected it, I guess I'll have to convert.

More people should watch Beck. No ninjas, no magical girls, just a band trying to make it.
One of the best slice o' life animes out there. I really wish they could get the rest of manga translated, it was getting real good at issue 12.
