Definitely watch Trigun. If you liked Cowboy Bebop you'll like Trigun.
Other animes that I think are good are Outlaw Star, Karas (the story is decent but the animation! My god the animation was gorgeous!) and Kurozuka.
If you're looking for something set in the Edo era you might want to give Bakumatsu Kikansetsu Irohanihoheto a go.

Edit: Also forgot to mention Blade of the Immortal. It's also about samurai. The manga is amazing and the anime should be just as good.

I'm 130 episodes through Naruto, but by this point in time you've probably already seen it or have no intention to do so (I'm kinda behind on my anime) other than that there's Bleach, Hellsing (I've only seen Hellsing Ultimate...the 1st 4 episodes at least) Death Note, Dragonball Z which as with Naruto you've probably either already seen or don't want to.

I used to love Tenchi Muyo, any of these sound good to you? I'm just listing all the anime's that come into my head, lol Excel Saga? anything by Hayao Miyazaki and/or Studio Chibli is worth a look if your in the mood for cheesy feel-good stuff, if you want Feudal Japan there's Inuyasha but if you don't like filler that one's an extremely bad idea, I myself don't have a problem with filler but even for me Inuyasha was too much lol

EDIT I should mention that not everything by studio Chibli is altogether cheesy...Princess Mononoke wasn't that much, and that's amazing

I just finished watching Kaze No Stigma, which was pretty good, i liked Naruto, just give it some time and it'll grow on you, i used to like Bleach before the writer gave the fans a middle finger. But i ALWAYS reccomend Tenjou Tenge, that was just...epic. Also planning to watch Chobits and Full Metal Panic. Could anyone tell me if they're good or suck a big one?
Thanks =D

Have you ever watched Baccano? It has one of the best stories I've read seen.
But other than Baccano, I'm watch FLCL, FMA:Brotherhood, and black lagoon right now
all of those are good shows, but the female lead in BL is walking fan-service, kind of annoying, if you ask me.

One, it's Ghibli, two, you haven't watched Grave of the Fireflies, have you. It and Madoka are the only series I've seen that have made me have a good long cry.

On that subject, watch Madoka.

Well the most recent animes I've seen are...

Puella Magi Madoka Magica - Freaking amazing... Going to be talked about for a long time...
Infinite Stratos - VERY cliche harem, but its okay...
Ore no Imouto ga Konna ni Kawaii Wake ga Nai - A must see...
Denpa Onna to Seishun Otoko - Just started airing, so far enjoying it...

Yeah... so I recommend these...

Well these are the ones that i think are awesome:

Ghost Hunt is really, really good, and the dubbing isn't bad.
Naruto because its ninja! and entertaining. :D
Code Geass: Lelouch of the Rebellion, i've only watched the first couple of eps so far but it's very intresting.
Ouran High School Host Club, this one is really funny.
and then Death note it's good too.

Katanagatari would be a great choice then. I haven't seen it yet, but I've heard lots of good comments on it.

Basilisk is a really cool one, then.
I'll also recommend Beck, because it's one of my favourites ever.

Just started watching Highschool Of The Daead (weirdly got the same acronyms as house of the dead, reference?), it's constant fanservice, to the point of ridiculousness but it's an anime about the zombie apocalypse, and is constantly fun to watch. Plus it has that one "don't let him come with you, don't let him come with you, don't let him-shit he's on the bus" character.

Two anime shows I just recently finished were Seitokai no Ichizon and Seitokai Yakuindomo. I guess they don't have an english dub yet, but the shows are still pretty funny sober xD
Shows that are in my home collection (mostly past shows, please tell me what you guys think):
Last Exile
Romeo x Juliet
Count of Monte Cristo
FLCL
Welcome to the NHK
Cowboy Bebop
Ouran High School Host Club
Full Metal Panic Fumoffu
Gundam 00 (season one, because after that epic battle, the show just got predictable and upsetting story wise)
Gundam Wing
Code Geass
Eureka Seven
Neon Genesis Evangelion
Wolf's Rain
...
and I think that is it in my collection. I would recommend any of those.

OH! And the Ghost Stories' English Dub is hilarious! YOu should watch that! xD lol

I'd highly recommend Death Note, I'd heard about it several years ago and when I actually got around to watching it last year I loved it. Watched it again recently actually :)

FullMetal Alchemist is pretty good too.

They've already had a brief mention on here, but I'd go with Soul Eater, Death Note, Full Metal Alchemist and D.Gray-man.

If you want to go REALLY old, then try and look up 3x3 Eyes, The Legend of the 4 kings and the one off movie RG Veda
