Right now I'm watching the Tales of Symphonia anime, it's pretty awesome. Before that I watched Tenchi Muyo and some of it's spinoffs. Once Summer starts and I have more time I might continue to watch Tenchi Muyo.

WEll if you're one of the 2 who haven't heard of it or live in a cardboard box, Full Metal Alchemist (both the original and Brotherhood) which is my favourite anime of all time. Also check out Claymore, Code Geass, Elfen Lied, Death Note, Soul Eater, Hightschool Of The Dead, Panty And Stocking With Garterbelt, Cowboy Bebop, Beelzebub, Trigun, Berserk or Hellsin(especially the OVA series).

I was getting worried about the lack of love for One Piece here still not enough though needs more one piece love, so One Piece gets my vote the sub over the dub not because the dub is bad there is just more to watch in the sub and FUNnimation are taking there sweet time realising the episodes

If you just happen to like funny stuff, and some mechs go for Tengen Toppa Gurren lagan ,
For more dark and serious, i'd say Hellsing, the ova and the the other anime they're both good(ova is superior though).
Watch BErserk, though i'd recommend the manga, if you can get hold of it, it has waaay more detailed action and story than the anime(Though it's really visceral , so take that in mind).
Hmm...Toradora! is preety funny too.
Also might want to try GITS STand alone complex and second gig.Not quite as good as the movies or mangas, but they are pretty good too.:)

At the moment i'm watching the second series of Clannad, HOTD (High School Of The Dead). And I recently finished all of Spice and Wolf and Puella Magi Madoka Magica, both of which are great.

code geass is a good anime. the plot and story are great and the ending is very
sad and made me cry
its got a tiny bit of fanservice like you know the way people have to be naked when they shower. its very dark so if your not into that kinda thing DONT WATCH. the only bad thing about it i can think of is thats its painful to watch lelouch's creepy laugh...

Well you seem to want edo period, I'll assume you mostly want samurai.
Kenshin is a must watch, even if it's a bit old.
Samurai 7 is pretty good, i mean it's samurai vs mechs...
Sengoku basara is alright, it's one of those over the top action with little plot if your into that thing.

Hellsing ultimate ova is epic, bloody, and epic. Notice I put epic in there twice, yes?

I'll vouch for the fact that I liked those.
Black Lagoon is my favourite and Higurashi is really good to, it's both scary and cute. Berserk is also great, though I hated the ending

Watch Ghost in the Shell and Birdy: The Mighty now.
Ghost in the Shell is my favorite anime of all time, and it is the inspiration that made Matrix possible.
Birdy: The Mighty is my second favorite anime, and is a perfect combination of sci-fi, action, romance, humor and awesomeness. I've never found an anime as well balanced as Birdy is.

Bubblegum Crisis: imagine Iron Man with 4 hot chicks who are mercenaries and live in the same future as Blade Runner but are less miserable.
--
Record of Lodoss War: this is basically a DnD campaign that has been transcribed as as a result, plays almost every fantasy cliché and trope to the hilt and is all the better for it.
--
Space Adventure Cobra: the adventures of a Han Solo-esque space pirate with a sexy robot sidekick, a cool ship and a huge gun in his forearm. That is all you will need to know.
--

These are old-school, and by modern standards their dubs are probably atrocious. That however is irrelevant: the action is well paced, the characters well developed, the music very kick-ass and some of the shout-outs to other media are fantastic. Try watching Lodoss War as a DnD fan and see if you can work out when the DM was being a tyrant and when he let the PC's use some serious fucking Hollywood points.

Best of all, aside from Cobra (which still gets a pass since I don't think many of the women are bustier than like an E-cup), they are largely fan-service free.

Ok that rant aside anime worth your time Yu Yu Hakasho is awesome. Its like DBZ meets Bleach and it has an actually end. Think its like 117 episodes. You said your going to watch trigun, very good, defiantly get to that. Gunsmith Cats is another good classic anime. Bacanno = epic. A new show this anime season is An No Exorcist which is shaping up to the awesome as well. (It looks like trinity blood but better).

NOTE: (people who are or are thinking about starting bleach)
Yeah im just going to say it now.

Bleach has become terrible. To much filler, and show reset it self which basically means the whole first several arcs up until Aizens defeat is pointless. They should have followed yu yu hakashos example and just end the show at that point.

Naruto however has preserved quite nicely despite it also containing a lot of filler. (at least naruto filler is usually flashbacks to events that you didnt witness the first time around, whereas bleach filler is ALTERNATE STORIES THAT HAVE NOTHING TO DO WITH ANYTHING).

I've been watching The Sacred Blacksmith, which only ran for 12 episodes so far but did leave it open for more. Sekirei is another good one that has 26 episodes so far but will obviously continue when the manga gets completed.
