I played through the whole game using just my Hidden Blade
Once you learn to do the counter, it's actually the fastest way to kill people.
You have to counter them (or notice when they taunt you or cower.. you can Assassinate them if they do, without countering), but once you learn to do that well, EVERY SINGLE HIT is a kill.. my first time through the game, huge melees were a pain in the ass.. I'd counter, and knock a guy down, then another guy would get in front of me and I'd have to fight him.. I wasn't able to effectively concentrate on a single enemy.
With just the HIdden Blade, that's not an issue.

Before guns it was interesting because it was parrying, striking, countering...etc..
You're thinking of fencing, which was a sport for nobles back then. Real warfare involved massive broadswords, where you relied as much on the sheer mass of the weapon, if not more, than the deftness or sharpness of the blade. So swords were basically used as big pointy clubs.
Movies often get this wrong, but a bunch of guys wildly swinging swords around like so many large sticks is less thrilling than skillful swordplay.
actually, wars were won back then by their shields, not their weapons. (well, ultimately the weapons won the fight, but the shields won the battle.).. an army that had an advanced shield technology was the one that had the advantage.
