Ninjas, that is all.
The assassin's guild is essentially ninjas. I would have liked your comment better if you said "Chocolate Pudding" instead.

Think before you blurt out something.
I meant that I'd like to see a Feudal Japan Assassin's Creed. And no the Assassin's Guild is not essentially Ninjas. Historically Ninjas were covert mercenaries for hire, not the Ninja clan warriors that the media today portrays them as. They did espionage, sabotage, AND assassinations for pay. Usually under the employ of daimyo(territorial lord). The Assassin's Guild is there to fight Templars. Two completely different things. Maybe you should learn your history before you blurt out nonsense.
So you're saying that I'm stupid to see parallels between Ninjas and Assassins? Let's take a look at this.

In the games you not only assassinate (done for money or the furtherance of one groups goals means very little) but you spend time sitting on park benches to hear what people are talking about, beat intel out of people, and steal items of information. But that isn't espionage apparently.

And wasn't the whole goal of killing all those people in AC1 about sabotaging the Templars' plans to rule the world at least until the plot twist?
You still don't get it do you. The parallels between Ninjas and the Assassin's Guild are extremely vague. You could say that Assassin's are the same as Soldier because they both kill people in order to stop the enemies from taking over their lands. You completely ignored my explanation of how the way that Ninjas and the Assassin's Guild have completely different structures. Once you take that into consideration then having AC3 in Feudal Japan isn't so plain cut and simple. Besides, it'd be nice to have a story where Europe doesn't have major influence over the land. That and we haven't had a "true" Ninja game since Tench: Wrath of Heaven.
The only reason the parallels are in any way vague is because there are years upon years of information we can gather about ninjas, but there are two games about a fictional guild of assassins that operated across the Mediterranean (really we don't know where all they operated we just have Italy and the holy land that we know for sure.)

Am I the only one who thought the only logical next step was Desmond punching Templar face? The reason they sent him to Italy the first time was to train him to be an assassin. So that he's been trained, they now take on the Templars, right?

Victorian England is 100% the way to go; he (or maybe even she) could have some crazy steampunk gadgets, crawl through the sewers or jump and climb over the rooftops of the claustrophobic houses of Victorian Britain. SMoggy skies, hectic streets, filth, squalor and opium dens; victorian england is perfect.
