Hey, what are the best gaming mods you've ever seen. I'm obviously talking PC here, considering the consoles don't like modders very much :/

Quite the vague question. Also subject to favoritism and personal preference at an extreme level, considering any game is allowed here.

I will go with one mod that I just saw a ton of quality work put into: Rome Total Realism. A full conversion mod made for Rome Total War, it may not have had all the little things that made everyone happy, but the amount of work that went into making it unique was tremendous. They even created their own soundtrack for it. An original soundtrack for a mod. It was a really great mod in terms of what great work went into it.

There's a Dragon Age mod the removes that stupid hats while still keeping the bonuses they give.
The hats are reeeeeeeeeeeeaaaaalllllly horrid looking, so that type of mod is a godsend.

San Andreas Multiplayer (SA:MP) is my favorite mod, because it adds online multiplayer to one of my favorite games of all time :)

But seriously... hmm... well to me, certain Fallout 3 mods that... make me happy.

We discuss this no further. Ever.

Insuregency: Modern Infantry Combat for Source engine.

I would not be suprised if it turned out that the game wasn't using the Source engine. That mod team really are geniuses with what they did.

L.U.R.K. for S.T.A.L.K.E.R. SoC. It adds a bunch of new weapons and much better graphics. Definitely worth a go for a 2nd or third playthrough.

Lithium Q2: So fucking simple, but so amazing, was pretty much the standard for Q2 games.
Action Quake: Another Q2 mod based on action movies.
They Hunger: Half-life mod, great horror mod by one of the best single player mappers ever.
DoTA: This one is obvious.

Desert Combat for Battlefield 1942.
Once it came out, I would have played it probably 10 or 20 times as much as the original.

Replacing Cyrodiil with Nehrim was probably the most fun I've had with Oblivion, with the disclaimer that it still has plenty of the same mechanical issues. Still, having hand-crafted terrain and a creative setting makes all the difference in the world.

Oh yeah, definitely. It also makes it creepier and much, much, much harder.

I'm trying to think of mods but I honestly don't have that many that I can think of... There's probably an amazing Oblivion mod... I just think the graphics mods for games like Deus Ex are the most useful.

I might have to give that one a go.

My favourite mod is a map called Blueice Twilight, for Jedi Knights 3: Jedi Academy. It's not a very well-known map, but it's huge, complex, diverse and beautiful.

Also the Chalk mod for Morrowind. Simple, but infinitely useful. As I always say, simplicity is genius.
