my fav NPC has to be any begger from Elder Scrolls IV Oblivion, mainly because of the whole graspy voice thing, then you ask them where the palace is they turn into the gaurd who will arrest you for killing/pickpocketing them!!!

Minsc (and Boo)!!

This. I could be really annoying and argue that he's not really an NPC since you have direct control over him; but he's not the protagonist, so it's close enough. He's one of the greatest characters in any game, hands down. Ok, he's dumb, but he's a good person, and is completely committed to wiping out evil. He's also completely loyal to the protagonist, and prepared to do anything to help them.

Provided you're not evil, anyway. Because then he might just have to administer a butt-kicking! For goodness!

Unless you refuse to save Dynaheir of course, or if you're too late (Baldur's Gate 1). And let's not forget Boo's squicking sound

My favorite is Virgil from Arcanum. He has a great character and story line, great skills, plot twists, ... Just like Imoen from Baldur's Gate you just want him to be by your side.
