I'll try not to echo suggestions, but give some opinions on what's out there.

1.) Soul Eater. I didn't enjoy this one. Ended up with a gigantic "meh" from me, really. Good ideas for the most part and fairly interesting characters, but it didn't keep my interest.

2.) Code Geass. If you like mecha anime, you'll like Code Geass. If you like moral ambiguity, you'll like Code Geass. Hell, if you ever watched Gargoyles and thought that David Xanatos was the single most awesome villain ever, you'll love Lelouche.

3.) Neon Genesis Evangelion. For all the hate that it's received in the past, NGE offers a truly deep look at the human psyche as you look into how a war is slowly destroying the minds of three teenagers.

4.) Elfen Lied. Look past the blood. Look past the nudity. Hell, if you've ever seen porn or any of the Saw movies before, you've seen worse than this has to offer. Look into the characters that exist here and you'll find people who have been through trauma and are simply trying to find a place to fit in in a world that hates them.

My recommendation, and this is almost obligatory as my fanboyishness for it should be known by now:

Magical Girl Lyrical Nanoha. It presents itself as a generic magical girl anime for the first... oh, I'd say three to four episodes. Then Fate's introduced. Then you see what sort of trauma she's going through. As the series continues, you'll find yourself watching, essentially, a magical girl anime that thinks it's a mecha anime. Note that there is some nudity here, but, as the series progresses, it becomes less and less prominent. Watch all three seasons if you get the chance (total of ~52 episodes).

Best anime? I don't think there is one. Anime's I enjoy? There's a few. Hellsing, Hellsing Ultimate, Trigun, Full Metal Alchemist, Full Metal Alchemist: Brotherhood, Death Note, Devil May Cry, and Avatar: The Last Airbender are my personal favorites.

I wish I could take part in the conversation - especially when I'm trying to avoid going to bed... But sadly all anime looks the same to me.

... actually, I did watch an episode of Death Note at a LAN - at six in the morning. That demon that originally dropped the notebook was actually rather interesting, and oddly funny even though I couldn't understand a word (Thank you, subtitles). So I suppose Death Note wins by default for me >_>

Watch the dub. If you liked Ryuk (the demon), you'll love the rest of the cast. To top it off, you won't have to worry about poor english dubs, as this one was done fairly well.

My personal favorites are One Piece and FMA. Both are fantastic and I really recommend them.

I didn't read through the thread so I don't know how many times it's been mentioned(and I'm sure it has been), but yeah - Cowboy Bebop. Duh!

Gurren Laggan is very good, but I see that on the bottom bost. What I find suprising is no is mentiong Mushishi.

Mushishi is anime mixed with the twilight zone with beautiful animation and great voice work by the Jappenesse cast and American your choice.

Kenichi The mightest Disciple is just fun, the stories weak but the action is good.

And then Claymore is also quite good. But really top choice of mine is Mushishi

Try the manga, if you can. It's still going, and has a much better story so far. They are the same about halfway through or so, however. I didn't like the anime either, it tended to really drag stuff out.

Anyway, I like:
The Big O, Gurren Lagann, RahXephon, Trigun, Eureka 7, Death Note, Code Geass...and others I forget.

While no objective "best" exist, my personal favourites would be.

Higurashi no Naku Koro ni (When they Cry): My personal favourite so far (with a User Group [http://www.escapistmagazine.com/groups/view/Higurashi-no-Naku-Koro-ni], a User review [http://www.escapistmagazine.com/forums/read/326.187959-Higurashi-no-Naku-Koro-ni-Kai-When-they-Cry-2-user-review], the whole shebang). The first season is some of the finest psychological (and at times physical) horror mysteries ever created, and while the second season drops much of the horror in favour of the now more action oriented mystery approach, I still quite liked it.

Spice & Wolf: A very close second. The whole setting around medieval economics actually intrigue me (*punch-for-dust*), and the characters and their interaction is flat out incredible. The artwork is beautiful, and the pace is slow and thoughtful, favouring thorough - even semi-academic - exposition of what goes on and what immediate effects it'll have, all the while with the effects on the personal relationship as a hidden undercurrent, visible only in glances and expressions. And I even enjoyed the romantic comedy aspects of it, which would usually weigh heavily against any series in my book. It's definitely a niche anime, but it hit dead center with me.

Baccano!: A masterfully spun gangster drama with supernatural elements. Incredibly brutal, often hilarious, utterly fragmented in its storytelling, and exciting until the end.

Death Note: As Yahtzee said, sometimes things are popular for a reason. A relentless battle of wit and ethics, with enough action to keep everyone involved. The production values - including the dub - are sky high, and the artwork pretty good overall. It may dip for much of the second arc, but it still remains a great anime as far as I'm concerned.

Excel Saga: While it may not be the weirdest thing anime has to offer (not even Puni Puni Poemy holds that crown anymore...), it's an anime parody show far too bizarre to not see and enjoy. Can easily be watched multiple times, as 4 words a second dialogue regarding absurd storylines will ensure that most will be missed the first time around.

Elfen Lied: For all the ultraviolence and inappropriate fanservice, it still manages to be a very emotional - if extremely dark - drama. And it's only 13 episodes (+ 1 OVA), so it doesn't overstay its welcome.

I've watched a lot of anime but now i'm having trouble finding more good series. I don't care if its romance as long as it has a deep story and good character design, and some action might help. I'd also like to know what you think the best Anime of all time is and why.

Out of the little I watched i'd probally say Vampire Knight because it had an intriguing story and character development with plenty of action and it was able to keep me interested.
Witchblade is also a pretty interesting anime. This review [http://justreviews.net/article.php?id=24] is pretty spot on on what you can expect from the anime.

And watch this in HD.
