KotOR 1, Planescape: Torment and to some extent Fallout 3, but it's not quite on par with the two first ones, and I'm not really that much of a FPS fan, even though there was a RPG twist to it.
Baldur's Gate II, especially with mods.
Planescape: Torment, Awesome atmosphere ans story.
The Witcher, For atmosphere as well and the choices.
Honorable mentions for Mass Effect and The Fallout series (though not so much #3, I thought it was meh.) Including Tactics, even though it was more of a rts than rpg.
Wizardry. It was so damn hardcore, if you died, you'd have to reroll your party and go get the corpses of your last party and pray literally that resurrection worked and didn't consign their souls to the void.
There were moments, around the beginnings of Fallout 3 and Mass Effect that I thought they might have the potential... but no, Baldur's Gate 2 remains unbeatable.
It's tough for me. i enjoyed anything with the following phrases in its title: "Baldur's Gate" and "The Elder Scrolls". That being said, my top three would probably be (in no particular order) Baldur's Gate: Dark Alliance 2, Baldur's Gate 2, and Oblivion.
