I could never pick one. My personal favorites:
David Hanlon's theme for
Druid 2: Enlightenment: http://www.youtube.com/watch?v=8C3hwd_qHak
Almost everything Rob Hubbard ever did.
Zoids,
Delta,
Commando,
Knucklebusters,
One Man and his Droid,
The Human Race....
Really, a lot of C64 composers in general. Ben Daglish, Fred Gray, Martin Galway, Chris Hulsbeck.... I'm sure I'm forgetting someone!
Plus, almost everything Bobby Prince did for
Doom and
Doom 2, especially:
Doom 2 MAP09: Into Sandy's City http://www.youtube.com/watch?v=PkhCNx-8Qos
Best use of a harpsichord ever. (Was originally a piano but no one wanted piano music in Doom. He changed it to a harpsichord as a joke. Everyone liked it.)
Doom 1 Victory Music http://www.youtube.com/watch?v=kX3IA3Nop3o
The common thread I see is that they all did great work but with limited technology - C64 composers had 3 voices to work with. Bobby Prince had the instruments from a basic MIDI setup. And yet they turned out music that's still being played and remixed. It's not the quality of the tools but the skill of the wielder.
