Speaking as a woman who has only played mass effect 2 out of the biowhere line up I'll say that the romances in the game for the females are way better than the male ones (but only because the female options includes garrus).
the males get
A. Bitchy succubus with a douchebag complex
B. psycho misanthrope who is up to her eyeballs in issues
C. an irish alien you can't love without risking her life
D. frigid cop who is old enough to be your great great grandma
E. her daughter who kills you if you make love to her.
the females get
A. an epileptic fish frog
B. a suave cat/lizard who can't take a hind (his busy with calibration)
C. Bland Boring McDaddyissues
D and E are mentioned above
if not for garrus i'd say it's disappointing playing as a female

Honestly, I thought Carth was pretty well developed in KOTOR I, and as you pointed out Alistair's alright, but I see your point here.
I think, and this is seemingly something that a lot of other people have hinted at, the relationships Bioware tries to craft are always going to be subjective and making a convincing romance is hard.
Try splicing together any conversation my girlfriend and I have had recently and I bet just about all of them would make someone up there try to kill me with a grapefruit spoon (they'd just be very nonsensical/stupid). Love it! You should send that stuff to BioWare. Maybe convince them not to run those horrible Liara... things. I was talking to my wife about how bad those things were and she made a good point (with pleasing visuals) that holding your arms like that to push up your breasts is not only impractical, it's also very uncomfortable. As a female player, I don't feel that we have a bad pick at all. of course it depends on your preferences but I didn't find any guy to be a bad choice. I picked Anders i dragon age 2 because I actually found the chantry to be corrupt, but that's a topic for a different discussion.
Jacob I don't hate. He's a bro but I don't find him love interest material. I kinda just want to give Thane a pick 'ol hug and I romanced him for the second play through.
Fenris and Anders are so radically different that it's hard to say anything here... But your opinion of them really depends on what side you deemed 'right' in game but I honestly didn't find either to be a bad character. Now, i have yet to get my hands on origins so (I'm working on it) I can't say much there.

DA: O: Morrigan: Frigid *****. Lelliana: Religious nutcase.
ME2: Miranda: Kind of bland. Jack: A complete psycho. Tali: Personality deficient, set up as something of a little-sister figure, which makes boning her creepy.

Oh, holy fuck Anomen was actually mentioned! I think that just made my day since the first thing that pops into my mind when it comes to crappy female romances is Anomen. Aside from looking like he's stepped off the cover of some cheesey romance novel, the romance is half as long as any of the male ones, and ends with you sleeping with him. All that "my lady" this and "I care for you" that just to end with hopping into bed and never hearing from him again. I don't know if it was laziness or if the developers were just being eerily realistic about how romance actually works in real life.
But Garrus, on the other hand, is completely smoking hot, and I don't care what people think of me for that. And Alistair. My favorite part about wooing Alistair was how much it reminded me of wooing my own real life awkward geek of a boyfriend.

I played Femshep (I'm a man, let's f*ing roleplay!) and I went for hunky Garrus. Sure, he's Jurassic Park meets Dr. Moreau, but he was funny as all hell "You know me. I always like to savor the last shot before popping the heat sink. Wait. That metaphor just went somewhere horrible." Love a lizard with a sense of humor.
Point is, Bioware definitely throws in viable, maybe even realistic, romances for people not hung up on social biases and racism (yes, discriminating against turians IS racism).
