Pretty much anything that crossed the "self-defense" line. If he/she just insulting you or something like that, it's just easier and more effective o simply report them to the principal, who can punish or even fire the teacher if the offense is bad enough. You can´t punch someone for beeing a teacher, but you can punch that same person for beeing a douchebag, just don´t do it at school, AND don´t go to his house either, police won´t like that.
Just wait for a random encounter and strike, preferably when you don´t go to that school anymore.

The proverb says to have patience because your enemy will eventually destroy himself or be destroyed by someone other.
