Front Mission 3. Epic storyline, mechs, customization, the storyline actually splits and each one features almost entirely different missions, infantry taking on mechs with pistols, a computer that lets you access a great number of future websites, I could go on like this for days.

Silent Bomber. I can't track this game down for love nor money now but I want to play it again so badly. I must have finished it 20+ times back in the day.

Tomb Raider 1,2,3 were great and of course i had Spyro: Year of the Dragon which i played through again a few months ago its so much fun!

Valkyrie Profile, is probably THEE best game I have played on PSX, actually on most systems to be honest.
I'd have to say that both the oddworld games would be my choice, they're both amazingly fun and engaging, and are still very playable by today's standards
