I've always wanted to try dual-wielding in something like House of the Dead in the arcade, but I could never bring myself to chuck away £2 on what might turn out to be 120 seconds of embarrassment.

Please, PLEASE don't mention such a bad game. I'd rather have single-cursor aiming for dual wield than take anything from DMC.
I don't understand. DMC sucks, so you don't want any part of it to be used in any other game? If a game could make great use of a mechanic, would you rather it used an inferior variant and let a game you hate keep the good stuff to itself?

Did anyone say it had to be an FPS? Because in Brute Force for Xbox 1, Tex could dual-wield rocket launchers, rockets and chaingun, etc. etc. etc. I liked the game anyway. Granted, he had super-mongo retard strength or something, but still, a flimsy pretext is fine when it'll let me dual-wield rockets, or miniguns.

Resistance has a good system, but really it'd be tough to dual-wield without auto-targeting or having to hold still as in Goldeneye. Even so, Halo with dual Grav Hammers would be 31 flavors of insane.

Single-wielding can be stylish if you pull it off right. Take for example Tom Cruise's performance in "Collateral", particularly his rapid draw and engagement of two thugs in an alley. It conveyed the sense of cold precision in his character. Solid Snake and Big Boss's use of more realistic stances and techniques put them in sharp contrast to their larger-than-life opponents, particularly "I'M COVERED IN BEES" and Psycho Mantis.

Of course, this wouldn't quite fit if transplanted into Devil May Cry, but for each game its own.
