The only one that comes to mind is Solus from Breakdown.
Ahh Breakdown. One of those shitstained gems from the old xbox era. I liked the game but I know plenty of people didn't. I thought it was a fun game regardless of it's frustrating flaws.
Anyway. You might not know of the game at all, so here's a little backstory:
Derek awakes in some kind of facility with a case of plot convenient amnesia. After a short gymnastic session to test your physical ability, a squad of military invades the facility killing every scientist in sight and are just about to kill you. When suddenly, a plot convenient time traveling woman appears in your room just in time to save you from them. And the game begins!
The primary opposing forces of the game are the mysterious "T'lan" warriors. Which are these mute swolled out alien freaks that are completely invulnerable to all forms of damage. Bullets simply ricochet off their rippling muscles and they quickly mop the floor with the military invaders. Then they turn their sights to you. That's right, the invincible ultra powerful super alien soldiers are coming after you now. They can shrug off bullets, grenades, rockets, how the hell could you even hope to hurt them?
With your fucking fists.
Turns out you are the product of a plot convenient super soldier experiment to imbue you with the powers of the T'lan. So instead of fleeing helplessly from these rampaging killing machines. Get right up in their motherfucking faces and give 'em a taste of your fist. That being said, they can still be quite a threat. They hit really goddamn hard, and fighting multiples of them is more frustrating than being a fun challenge. Later on in the game, your powers greatly increase allowing you access to more abilities to kill these bastards and keep the ground even. Soon the first rank of T'lan warriors that posed a huge threat in the beginning of the game can be annihilated with a few punches. But don't worry, enemies also upgrade a long with you. The highest ranking T'lan warriors are much faster and stronger and bigger than the first rank. And there's MORE of them too.
However, all of these T'lan warriors are led by the baddest T'lan of them all. Solus. The only one that can actually talk, but he doesn't possess much of a personality and seems more like a Terminator than anything. That's okay. He doesn't need to talk when he can just instantly kill you outright. You encounter him multiple times in the game and you can NEVER beat him. Even with your T'lan powers, you can't fight him. He's just too strong. And you have to run.
Towards the end of the game after increasing your power as much as you can, you encounter Solus in the middle of a hellish alien arena. You walk up to him and try to punch him, then the fight begins. CUE THE EPIC FUCKING MUSIC!

After you seemingly win, Solus stands back up, takes a deep breath and says "Not finished yet. Round 2."
Then, you lose. Solus unleashes his full power and brutally beats the shit out of you. You. lose. Soon after all hope is lost, a nuclear missile hits the alien arena, and it's "Game Over". But thanks to time travel shenanigans, the game continues to reveal a very grim fate for humanity. And time travel shenanigans allows you to travel back in time, after greatly increasing your powers again, to take Solus on. Again. This time, Derek is at full power, and judging from the way that low ranking T'lan warriors react to a single punch, a single punch from a fully powered Derek has the strength of about 500 tank shells.
This time the ground is perfectly even. This is the real boss fight, and it's an awesome one. No swords or magic. No guns or rocket launchers. Just you vs. an unstoppable humanoid typhoon. WITH YOUR BARE HANDS. (And an occasional hadouken... and time manipulation.) The fight goes on for a long ass time and goes through several rounds, each time Solus increasing in power, each time the music becomes more and more awesome. And that asshole soaks up your relentless punching and kicking with no problem. Eventually, finally, under the assault of Derek's super saiyan punches, Solus finally dies for good.
Overall, I LOVED this fight. The setting, the music, the concept, it was incredibly fun and memorable for me. It's a good indication that this is a game that just does not fuck around. Another indication? The game doesn't end after you kill Solus, you still need to play for another good while before reaching the real end. And before that, after killing the final boss, you enter a giant room and are forced to take on a gauntlet of the most powerful T'lan Warriors. Even at full strength, Derek still struggles to take on more than 1 of these powerful T'lan. And you have to fight 20 of them at once. God.Damn.
The vault monster from Borderlands was okay, it took FOREVER to kill that thing, but it made me feel like a badass when I got done. The loot wasn't the greatest though, but I was kinda okay with that.
What class did you have? I guess the only reason I didn't die was because I used my Siren's ability like crazy and hide behind pillars when I had to fire. Was also probably the reason it took me forever to kill it.
I had a hunter and he kept killing me because of some spike thingy. I never knew what it was but it got me 2 times. And I was hiding behind the pillars =/
I'm pretty sure that he has tentacles that wrap back to where you enter the area. I don't know, I got some crazy broken Revolver as a gunslinger that just ruined the guy in ~15 seconds. Might have been more epic for me otherwise.
But I cant honestly think of a single game that I really loved the final boss fight. Unless Monster Hunter Freedom 2's White Fatalis counts, sitting on a round couch with three buddies fighting that guy... it was pretty wonderful, despite every time we failed it was cause the third kill was me.
Has anyone else noticed that most recent games don't really have final boss fights? And the ones that do are usually puzzle fights, not actually all out brawls. Actually, the last game I played where the only way to beat the final boss was pure skill and timing was Condemned: Criminal Origins. This guy was IMPOSSIBLE, but when I beat him felt a palpable sense of accomplishment.
Henry from No More Heroes (He is the proper endgame boss not the rank 1 assassin Jeane with her ridiculous super speed. Henry wasn't a big tough guy so something that was a huge disavantage to Travis. He is Travis twin brother who happen to be Irish and wearing a smart. In another word your complete other half. Sure he was still hard to beat (espically his cool instant kill attack) but it feel he is had more skill than you then just being powerful hax from the start.
Mine from Yakuza 3. It wasn't fancy, there were no frills or random new gaming mechanics, and Mine wasn't full of stupid special moves and he didn't break the game's rules. It was just a straight up fight, which made the end, all that you'd worked for so damn satisfying.

Yeah those spike things were a pain in the ass, it took me a while to figure out that I should shoot at the purple arm things. I know that I was running around a lot and trying not to get impaled. It was a bastard to kill, I almost ran out of ammo towards the end.
