Final Fantasy, FFIV, FFVI, and Tactics have all aged well. I still play them to this day. Heroes of Might and Magic 3 is still mighty. Super C is still great. Castlevania: SOTN is awesome. Pretty much anything sprite based still holds some anti-aging ability. I find that most 3D games really show their age, even if they have great game mechanics. If I play them on a non-HD TV, they work much better.

Wind Waker along with pretty much anything else heavily cell shaded. The more cell shading, the better the graphics age.

I'd also like to mention Mario Sunshine, that still looks better than Wii games and on par with a lot of next gen graphics.

god dammit now i want to go play that game again..

i had so much fun with that game compared to other mario's, i might just have to rebuy it again -_-

Skies of Arcadia still looks very nice, for the time it was truly something for the dreamcast, Especially the kickarse soundtrack.

Most sprite based games are still quite good if they were good at the time. Sprites don't age. And tactics games hold up quite well, if you're into that kinda thing.

Theme Hospital - still awesome.

I'm going with the enitre Tony Hawk series (Pro Skater to Proving Ground). The controls are tight and the game is always a blast to play.

Super Mario World + Super Mario All-stars (original or Wii version), Donkey Kong Country 1,2 and 3, Banjo Kazooie + Tooie, Ocarina of Time + Majora's Mask and Starcraft, Warcraft 3 and World of Warcraft (obviously). All of which I have played recently (within a year after finding my old SNES and N64) and have greatly enjoyed.

Tetris (1984)
Super Mario Bros (1985)
Wasteland (1988)
Super Bomber Man (1993)
Wario's Woods (1994)
Metal Warriors (1995)
Master of Orion II (1996)
Total Annihilation (1997)
Quake 3 (1999)
Rise of Nations (2003)
Ground Control 2 (2004)

I feel like a lot of these games had slick controls or a good interface and it makes them a joy to play, I have played them all in the last couple years and found them to be great fun.

To this day I can spend hours playing Banjo-Kazooie and Banjo-Tooie.

Also the Ratchet and Clank series, something about the humor in that game just never gets old.

Oh and all 3 versions of Super Smash Bros are still amazing.

Unreal Tournament I'd say is just as fun if not more fun than most shooters today. Hearing "ULTRA KILL MONSTER KILL GODLIKE UNSTOPPABLE" etc, is awesome.
Or you just start playing a game of CS:S, all the servers have those sounds added in :p

OT: Backgammon, as in on the board itself. That's hundreds of years old and still fun ...

And I have a feeling KotOR would still be fun to play nowadays. But I can't do it again now I know the spoiler.
Can't agree on that, inability to look up/down and the absolutely awful combat/inventory/skills system aged it pretty badly. Tried playing through it again recently but found myself unable to. Granted, a part of that is still remembering the story somewhat, but still, the gameplay itself is pretty bad by today's standards.

Old Splinter Cell games have aged pretty well, Chaos Theory in particular. I played through it last year, prefer it to Conviction 100 times over. C&C Generals/Zero Hour is still fun to hit up with some mates. Worms: Armageddon I would say is the absolute king of games that aged well (and totally owns Worms: Reloaded crap). GTA Vice City/San Andreas are also still fantastic after all these years.

Probably more, but those are just off the top of my head.

oh! Wild 9 is good still, and Bloodrayne, and good lord... there are so many "oldies but goodies".
i can think of at least 5 for each console pre-dating the 360

Pretty much every classic big hit e.g. Super Mario Bros, Pac-Man, Tetris etc.

As for myself;

- Dungeon Keeper (Graphics haven't aged very well but it is still great fun)
- Abe's Odyssey (Great 2D gameplay and the opening cutscene never gets old http://www.youtube.com/watch?v=T_R6hzBxzAs)
- KOTOR (Graphics are still nice and it doesn't matter how many times I play through it, it is still enjoyable)
