I'm never relaxed.
If I want to pretend like I'm trying to be, though, I usually stop gaming and go read a book or something.

Dwarf Fortress. It's relaxing to watch them run around, doing their jobs, living their lives, killing monsters, killing invaders, killing each other... All while having a smile on their faces (well, at least their icons are smiling)

Pixeljunk: Eden is incredibly relaxing. Sometimes I just listen to the titlescreen music to chill out.

Civ 4 - I like nothing better than zooming out and seeing all the work that my workers have completed, taming the previously wild and uncultivated lands.

It pleases me.

Failing that, the intro screen to Mass Effect is always soothing. I love that track. In fact, I love the whole soundtrack, it's fricking awesome.

Metal Gear Solid 4, all those cutscenes, just sit back, relax and watch them. Well not relaxing because they contain so much win you have to focus.

Audiosurf, definitely. Even on a fast song, it absorbs and distracts you; slower songs are a good chillout experience that distracts you just the right amount. Peggle is also very relaxing when it's not being frustrating.

Portal.

Jets 'n' Guns, when you've already beaten it once or twice and the enemies stop being a problem and start being flying moneyboxes. Press the fire button from time to time and watch everything vanish under a flood of plasma and bullets. Ahhhh, catharsis.

Just Cause, because hilarious sandbox antics get the endorphins flowing. (Recipe for fun in Just Cause: get a fast car, drive around going at least twice the speed of the rest of the traffic, and sooner or later you'll accidentally crash into/run over enough people that the police start chasing you, and what with the bizarre driving physics that also seem to apply to the AIs, you'll find yourself laughing hysterically before you know it.)

Any Unreal Tournament, particularly 3 - stress relief at its best. Put the bots on a difficulty where they'll kill you and whatnot but not really be much of an obstacle to your inevitable victory, pick your favourite map, throw on a couple of not-quite-suitable mutators (try Rocket Arena on Morpheus with 16 players), and unwind through violence. Guaranteed to bring a smile to one's face.

Any Final Fantasy game because after the first hour or 2 I have trained up so much that the bosses are a mile easier than they should be. For instance, Final Fantasy Tactics on PSP, the final boss fight was too easy for me. I had all lvl 60's fighting.

Lies! No other game has made me as tense as Fatal Frame. I almost cried the first time I played it and had to sleep with the light on.

I would say MapleStory for me. It's just a good game to relax and listen to the sweet music.
