Lord of War
El Mariachi
Desperado
Once Upon a Time in Mexico
From Dawn till Dusk
Planet Terror
(yes, Robert Rodriguez is an underrated director)
Hot Fuzz/ Shaun of the Dead
Goodfellas (especially compared to Godfather)
Aside from Planet Terror and Lord of War, I'm pretty sure those are all regarded as great movies.

I'm going to add to the Galaxy Quest number. That movie is terrific.

That I've seen, probably Lars and the Real Girl.

This one guy I know keeps telling me that I need to see Mike Leigh's Naked because, according to him and some articles I ran into trying to find a place to get it, it is one of the most underrated movies ever.

A Clockwork Orange, Gattaca, Blade Runner, the City of Lost Children. The only person I know in real life who's watched A Clockwork Orange thought it was about rape, drugs and violence. Which it was, but he still completely missed the point.

And lots of film noir classics are just forgotten nowadays too - movies like the Third Man, Kiss Me Deadly and Notorious. Which is a pity.

Great list of movies. I haven't found one that I've seen that I didn't like.
Big props to the people who mentioned The Fountain, In Bruges(it's brilliant black comedy film written by Martin McDonagh, people should see it, as with all these movies), Mystery Men, Moon, and PleasantVille
Though I would also like to add a few others, The Illusionist, Space Balls, and Death to Smoochy. I would also like to add a documentary, The Union: The Business Behind Getting High. A great documentary that delves deep into marijuana prohibition and makes a compelling argument for it's legalization. You can watch it for free on topdocumentaryfilms.com

Requiem for a Dream directed by Darnold Aronofsky, an amazing movie about people who will do anything to get what they want and pay the price in the end.

Shallow Grave is amazing too.

btw, Unbreakable and Signs were both superb in their own ways. Unbreakable is a character study while Signs is suspense/thriller so it's not surprising why people like one and not the other.

Airplane is one of my favorite comedies, but almost no one has heard of it. The cast is good, the plot is... legible, and the jokes are obscure (good)
That movie is NOT, by any stretch of the word, Underrated.

Assault on Precinct 13 (both original and remake). A John Carpenter cult-classic and one of the better remakes in recent years but hardly anyone has seen either.

Event Horizon as well

I'll also throw in Confessions of a Dangerous Mind. Sam Rockwell is one finest actors around and this film is just brilliant from start to finish.
