I chopped some walnuts and apricots, mixed it up with some Stilton cheese, herbs de Provence and fresh sliced chilli.
Then I sliced open some chicken breasts and stuffed them with my walnut/apricot/Stilton/chilli mixture.
Then I wrapped the stuffed chicken breasts in smoked streaky bacon, coated them in a breadcrumb and herb mixture, then slowly baked them in the oven.
They were absolutely delicious.
The sweet fruity apricots contrasted really well with the sharp creamy Stilton, which also contrasted well with the hot chilli bite. That combined with the chicken and bacon flavours and the wholesome, earthy flavours of the walnuts and breadcrumbs really made the whole meal a taste explosion, with lots of complimentary and contrasting flavours and textures with every bite. Also because the chicken breasts were double wrapped, they were still succulent and juicy... cooked to perfection.
