It is a nice idea, but this wouldn't work. The animals we domesticate are domesticated because they are relatively easy. Carnivores are very hard to farm on a mass level (think about the amount of meat they would need and most endangered herbivores are hard to deal with. Think about how difficult it is to raise their numbers in captivity as it is. To take the OP's example: why not dog? Other cultures eat them just the same, and it's not like they do anything for humanity any more (except pets)

Thats sort of my point.
