Could you guys maybe give a little description of each anime you list? I'm by no means a rabid fan of anime and I'm quite picky in my cinema in general, but I've seen some series that I just adore.
Samurai Champloo and Tengen Toppa Gurren Lagann would be my first recommendations. Claymore is another good one, season 2 should be coming out soon if it hasn't already. The Samurai X OVAs are also excellent, they focus on Kenshin back when he was an assassin. One of my all time favs is Berserk, but the problem with that is the anime stops way before anything is resolved, so you might not want to watch it unless you are open to reading the manga to continue the story. Thats all I can think of right now. I would recommend my ultimate favorite of Gundam, but its hard to point people towards a good starting point with Gundam unless you really know what parts they'll like.
Devil May Cry. And before you say anything bad, it's actually a decent anime. At least it has the wonderfully dorky Dante voiced by the same guy from the games on top of the cheesy yet addicting one liners. That and the actual animation is quite pretty. So.....watch it...It's Show Time!

I'm gonna go with Code Geass on this one. And I can see that a good number of people agree with me too. Be warned though, certain parts will make you tear your hair out because every single character decides to fuck up IN UNISON.
Also One Piece is very good for your Shounen fighting anime. The characters are well defined and interesting, but it's running into 300+ episode territory.
OH. The Melancholy Of Haruhi Suzumiya is a great 15 episode long anime. Funny, very interesting and not too long.
I love Hellsing ultimate you must watch it.
I reccomend the Excel saga series which is 26 episodes of insanity. (Its an anime on crack)
I reccomend trinity blood But the ending kind of sucks. (Trigun with vampires)
Gunslinger girls is a pretty awesome anime and pretty short.
You should watch Gurren Lagann. It is quite an awesome show if I may say. It is a mecha anime so I hope you dont have a stigma against those. It can be kind of perverted at times but overall it's an action show and it actually has a kick ass plot and some of the most charismatic and memorable characters I've ever seen. The official translated version is okay but the subbed version is still better in my opinion. GIGA DRILL BREAKERRRRRRRRR!!! (you'll understand if you see it).
My favorites:
*Eureka Seven: Described on TVTropes by at least one person as "Evangelion surfng while on pot". A funny one with perhaps THE most epic villain I've seen.
*FLCL: Evangelion on EVEN MORE acid. And concentrated into a shorter time. And a lot funnier.
*Death Note: Scratch what I said about Eureka Seven's villain, Light is cooler. Even if he is a bit of a ham.
*Code Geass: Evangelion playing Vampire: The Masquerade after lending "Atlas Shrugged" and "Looking Backward" to the Storyteller. And eating pizza.
And here's my theory as to what happened:
*Lelouch took Charles' Code.
*But he's dead. And not coming back.
*Because he made a contract with Suzaku.
*Which wasn't completed until after Nunally touched his hand, because he still had about 3 minutes left until brain death.
*And C.C. isn't crazy, because Lelouch's a spirit and she can talk to them.
*The cart driver is one of Lelouch's Geass slaves that she decided she'd use as a personal servant.
*Fullmetal Alchemist: Good magic, great story.
*BLEACH: Really good combat sequences, fairly deep characters. Also one of the few things I can list without making a reference to something else.
*Naruto: DBZ with ninjas and philosophy... but I still like it.
*Cowboy Bebop: Great music. Good characters.
*Big O... kinda. Has been described as Evangelion hallucinating that it's Batman.
*Evangelion. The definition of Mind Screw.
*Blood+. Seriously, how did nobody mention Blood+ by now? Sympathetic vapmires. And it manages a balance between funny and serious.
*Excel Saga... at least, what I've seen of it. Has been described as "What crack smokes."
*Trinity Blood (ending was definitely rushed, though): Could be Evangelion with a weird fetish, I guess... Better than it sounds from that, though.
*And of course Ghost in the Shell. Good characters, pulls of the whole post-cyberpunk thing well, and good philosophy.
I would recommend The Big O. Giant Robots + Steampunk + Noir = Win.
Other than that, as recommended above, Eureka 7. There's also some other good stuff out there: Gantz is apparently pretty good (just the first season), Code Geass(same to that), FLCL(crazy stuff, deeply thematic and only a few episodes, so you can watch it in a night), and Sayonara Zetsubo Sensei(comedy series, VERY Japanese though, some of the references will escape you).
Higurashi no naku koro ni- 25 or 26 episodes I think, and probably the most creepy anime I have ever seen. I can't tell to much about it or it would ruin the story of it. Also it has a sequeal called higurashi no naku koro ni and that explains the original and concludes the series.
If you have not heard they are remaking Full Metal Alchemist to be more to the manga storyline. It is on the 6th episode currently, and they are trying to get to when the original anime broke off from the storyline as fast as possible.
Tengen Toppa Gurren Lagann- as other people have mention is just the most epic anime ever. It does not stop getting bigger until it ends.
