Avatar: The Last Airbender. It's not anime, but it's animated, and it's amazing. It's a kid's show, so the first season is a bit juvenile at times, but it is more than worthwhile; easily the best show I have ever seen.
I've seen Avatar, it's awesome. In fact it's basically what got me into starting to watch anime, because I wanted more like it. I just didn't put it in because I wasn't sure whether to count it as anime or not. I'll try your other recommendations though! Are any of them like Avatar in particular?
Not really, actually. Clannad is a romantic comedy (that, again, is guaranteed to make the tears flow; I cannot recommend it highly enough), so not much similarity there. Orphen is fantasy, but is a bit more mature. I have to admit, the main reason I love anime is because Japan understands that good stories can be told well through animation. Outside of Pixar, Avatar, and some recent Dreamworks films, America really doesn't get that.

Full Metal Alchemist is similar in that it involves children in a fantasy world, but it's much more bloody and mature. Same goes for Naruto (though some of the humor in the first bit is less than mature).

And yeah, not mentioning Avatar is a good job on your part. Simply because "anime" is the term for Japanese animation. Avatar is American. Thus, not anime. But it's similar enough to act as a good bridge (it did the same for me).

If you want an anime like Avatar, I recommend seeking out Digimon Tamers. It's the third season of Digimon, and it is very similar in tone. It can be kind of silly near the beginning, but eventually matures beyond what you would expect (again, like Avatar; that show got intense later on). Just watch it with subtitles, for the love of everything that is good. In fact, that goes for most of these recommendations, especially Naruto. Holy crap that English dub is terrible.

The longer and more episodic an anime (or any show, for that matter) is, the less coherent the storyline tends to be, and as an extension, the less engaging the characters tend to be. One of the best things about anime, in my opinion, is that most of them are started with a story to tell. A story with an ending, as stories are wont to have.

I think it's because anime tends to flush out characters more than most forms of media, slice of life stories will be character driven where most shows are event driven and the characters are fairly simple and one-dimensional
If that's a problem you have then NEVER watch Tengen Toppa Gurren Lagann. it's one of the best shows ever but the ending will leave you depressed.
or you could pretend this happened

HAHA! I had forgetten about that one! Yeah, you REALLY don't want to watch TTGL if you have this problem with anime.

Obligatory Nanoha plug. 64 episodes across 3 seasons thus far. You can effectively skip the first season by watching the movie (which ramps up the tech of the anime) and helps add to the characterizations of the individual characters (the main big bad is portrayed in a slightly more sympathetic light, but, somehow, this makes her seem that much more like a *****).

If you're really interested in characters and don't mind some nudity, Nanoha's a good one for you. I highly recommend also checking out the Sound Stages and manga, both of which are supplementary and add to the anime rather than telling the story in a printed format.

Don't be surprised if you feel like an ass for hating some of the antagonists as the series progresses.

Ask people for a anime that has a horrible ending, not like depressing, just one so bad you'll be happy its over.

Might I suggest Neon Genesis Evangelion, and ignore the movie that made up for the last two episodes.

I still have anime that I refuse to watch the last episode of. I only finish the good ones when I feel like sucking it up. The last Roroni Kenshin OAV caused me to curl up in a ball on my bed in my dark room, feverishly rocking back and forth whilst sucking my thumb with one hand and shoving a spoon into a partially spilled ice-cream bucket in the other.

I've always been more fond of "Short Run" anime that goes for 13, 26 or 52 Episodes instead of the 300+ Episode Epics like One Piece, Naruto or Bleach myself. I like stories that go somewhere at a brisk pace and end when it feels right.

Typically? No, not really. Most of the shows where something comes to a close that has characters I really enjoyed or cared for (read: really was interested in the development of the character itself and their purpose in the plot) I feel things coming to an end means at least that character's conflict has finally come to an end and they can (hopefully) feel at peace.

Even Air TV, which is without a doubt an anime with an incredibly bittersweet and painful ending, has a sort of 'relief' once it finally comes to an end. Everyone's reached a conclusion and everything is 'resolved' for the most part. It leaves on a very slightly vague ending but the central plot is concluded and any further speculation doesn't hurt the primary product of the show itself.

The same can be said for products from the same creators, specifically Clannad and even Plane- Oh right, that doesn't have an anime yet, nevermind.

Code Geass ends on a similar 'all the central characters plots are concluded' ending, so I consider it another successful project as well.

In all honesty, there are rarely shows where I see a character I like so much that I want it to just keep going on forever. More often, I fear a character not getting a finite conclusion.

To use a non-anime example, recently a favorite series of mine, In Treatment, concluded its third season last week. The main character within the show is one that is, in a way, tormented by his work and has never, IMHO, truly received a sense of peace or happiness since the series began. He's not an UNBEARABLE tragedy, but a painful one without a doubt. He's be used, felt helpless, tormented by others, the list goes on for the sort of things Paul Weston's.

The problem with this is that (and fair warning now, if you haven't seen the ending for his sessions with Adele, don't scroll any further) things left on a vague premise where Paul's considered closing up shop and ending his practice because he feels like he's not going anywhere with it. He's 57, potentially has Parkinson's and feels like he's got nothing to live for and he's considering just stopping his work, figuring that (from what I interpreted) if he feels like he has nothing to live for (granted, he's not suicidal) he shouldn't be working to help other people figure out their inner conflicts and problems.

For me, I would HATE to see Paul never get the 'happiness' he deserves in the end. He's a kind hearted person who clearly cares about what troubles his patients and tries his hardest to help them. And ESPECIALLY considering that 2 out of his 3 patients from this season either used him or abandoned 'working' with him, the reasoning behind his ending his practice is significantly justified.

But as a fan, I just would hate for that to happen. So, I'm hoping for at LEAST one more season, where maybe somehow he finally finds a sense of satisfaction or maybe someone to love so he can either close his practice on a positive note or use that person to be a driving motivation to go on and keep working.

I'm crossing my fingers though that we'll get a fourth season.

tl;dr Short series are good and if characters are properly developed and have their conflicts resolved properly, it makes the 'parting' with that character that much less painful and more pleasant to the viewer. Anime, TV, movies, books, games, w/e, it applies for all media outlets.

'Holy Crap that English dub is terrible.'

Way to totally go and state your personal opinion as fact, wanna flaunt some more of your 'JAPANESE IS TEH PURITY' kind of mindset?

Lemonade, watch whichever version you want but more importantly, for the sake of grasping the story (since unlike season 2, no minor edits to the dub cut out important dialogue), just watch Tamers with a dub if you can.

No wait, more importantly, don't waste your time looking up episodes of Tamers. Go to your nearest best buy, FYE, whatever (Or go to an online retailer) and pick up three or four DVD's from different genres of shows. OR, take the CHEAP alternative (read: free) and go somewhere like Funimation.com and check out their anime offerings. Or Crunchyroll if you're fine with shelling out the cash for a subscription. But don't be a douchebag and go and torrent some show that is already licensed for release (or online airings) in the states.

All that aside, ff they have an english dub, check it out because chances are, YOU WON'T GIVE A SHIT ABOUT WHETHER IT'S IN GLORIOUS JAPANESE OR NOT. You'll either hear the dialogue or read the dialogue english and chances are you won't care either way. In the end a product's entertainment value doesn't rely ENTIRELY on the language the vocal performance is given in, it's a combination of the delivery of the character in general and everything else within the show, from the plot to the music to the art and so on.

Episode 20 of K-On! season two, if you've watched it you know what I mean.

And to answer your question, yeah. With tv shows, it is rare that I want more episodes, but it seems like I want more of almost every anime.

So watch longer anime? You'll probably like the long Shounen animes that often go way above 100 episodes.
It's not going to make me stop watching Anime. And I prefer shorter anime anyway, I tried watching Bleach and by the 70th Episode I was almost bored of it. Although that was my first anime ever so I could try going back...
I see. Well then yeah, that's natural I guess. I find that, by the end of most series, I don't want there to be any more though.

I advise you not to restart Bleach, though. Plot is just pulled out of the ass in it.
Never liked bleach. One piece though is epic. and humorous.

Wow. Calm down, dude. I never said to watch it in Japanese because Japanese is somehow superior to English. I just don't like bad English voice acting. I'd rather watch subtitled Japanese. I don't care what language it's in, only that the voice acting is good. In the case of Naruto, that means staying as fay away from the English dub as possible. I suppose that is my personal opinion, but unless you are going to claim yours as inherently better than mine you have no grounds on which to object. Recommendations are based on one's personal opinion, after all. On the other hand, the dubs for Orphen, Cowboy Bebop, Samurai Champloo, Fooly Cooly, and a few others are actually quite good. Heck, even the dubs for Clannad and Full Metal Alchemist are mostly bearable. But if something has bad voice acting, I will not recommend the English dub. Simple as that. Don't get all bent out of shape.

Don't watch Death Note if you like the Characters from Anime.

I'm really not that into Anime though, it's characters bore me more often then not. I just enjoy the conflicts between them.

I agree about the voice acting i'm the kind of guy that can put up with some ok voice acting wether its from evangelion to cowboy bebop to big O its fine with me unless its like some of the english voice acting from Blaz Blu its a little hard to like its english counterparts.

Well, I've seen Higurashi, I gave up on Texhnolyze (it's fucking awesome but i can't see it going anywhere and i'm ages through, also i know i'll just end up failing to comprehend the entire thing once it's over) so now I'm watching Ergo Proxy, almost finished, it has KICKED ASS so far. So many cliffhangers, very cool.

I suppose I kinda got attached to Rika during Higurashi, but not many of the other characters. Keiichi a bit, Shion a bit, but the rest, meh. It was awesome, though, the first arc scared the shit outta me and Massacre was some of the best entertainment I've seen in my life.

Oh, and if you watch Ergo Proxy, I reccomend the english dub. It's gooood.
