Grand Theft Auto series:
Try out a new city. One you haven't experimented with and one that doesn't immediately pop into sandbox simulation stereotypes (i.e. New York City). Maybe try out a sightseeing GTA game wherein your character is sent to three different places across the globe to track down an enemy. Maybe start in Russia, go to France, then end it on top of a Hawaiian volcano. Yes, it's a stretch, but it beats going between the three most popular US metropolitan areas for each installment.
Well three locations is a stretch but I could see going to at least two. They either need to choose lesser known Towns and what not in the USA to "recreate" or need to go to a new country all together, as you suggested. I vote for Japan because I suck. :)

Level grinding. I only hate it for new characters, though.

I also hate the Dark Assembly because it just never goes my way anymore.

Splinter Cell: Conviction

I hate how in every hunter level, there is at lest one part that is next to impossible to sneak through.

Bioshock Series: Use plasmids in more puzzles, no more escort quests, allow me to see my character's feet, no silent protagonists, and be set in the fall of Rapture.

Assassin's Creed Series: What is this, Lost? Why doesn't anything make any sense? Also, why are we still in the sword and horse eras?

Condemned 2: What the fuck was with that plot twist? So now I'm a Super Saiyan? Ludicrous.

Batman Arkham Asylum: There's nothing really wrong, though I wish you wouldn't taunt me with those trophies I have to come back to once I have the right gadget.

Gears of War 2: I wish the story was a little better, and that the characters weren't emotionless testosterone-fueled chimps.

Square ignoring Chrono Trigger for Final Fantasy (Insert # from 1-50).

Square forgetting that they had other franchises.

Square thinking that we have forgotten about their destruction of their fanbase...

Oh, UBISOFT - Nuff said.
While I agree with your argument there are a couple things that you may not have considered:
1)Chrono Trigger for SNES didn't sell as well as FF3 (VI)
2)Chrono Cross for PS1 didn't sell very well (even though it wasn't very good)
3)The Squaresoft Anthologies (which included Chrono Trigger) for PS1 didn't sell as well as they deserved
4)Chrono Trigger for Game Boy Advance had very poor sales

I love Chrono Trigger and would LOVE to see it get some respect (like Rodney Dangerfield R.I.P.); but so long as game players continue to spend their money on crap instead of wonderful games, Squaresoft would be a stupid company to spend development time, money and manpower on a game that won't sell as well as the FF series (whose last GOOD game was on SNES).
*sniff* I know, I know, CT has a soft spot with me.

Thing is with 1 &2 ) They haven't put out any games in the Secret of Mana series (Legend of Mana isn't really a game. Sword of Mana is kinda... Meh, it's not a hard game and the story was bland.) Also, Saga Frontier could come up and seriously be great or even a new Valkyrie Profile. I'd just like a little diversity than slapping the FF on a game and saying it's their creme de la creme. I stopped playing since FFX because I found the need to have a Cid in EVERY. LAST. O(*&^%*(^. Game to be quite boring.

With 3) I was kinda alluding to The game that will never be... [http://crimsonechoes.com/] They don't even use the game but they sit on the copyright. And it was such an awesome story. *sigh*

Morrowind

-The magic system was terrible: the way you had to switch between magic and combat modes was clunky and annoying in the middle of a fight, magic skills were painful to level since you couldn't restore magicka normally without the aid of potions or by stopping to rest and failure rates for casting spells at beginning levels were very high, and the amount of enchanted items found in the game that were far better suited to my needs rendered it pointless to level up anyway.
Dude, the thing you cited in Morrowind where you would run out of magicka WAY TOO FAST is so correct it's not even funny. You literally could cast like two destruction spells and then you'd say to yourself "Ope! Now I gotta find a place to sleep for 8 hours (in which I'll probably get attacked by cliffracers!) so my magicka can be restored!"

It's a good thing they revised that a bit in Oblivion.

The Condemned series: I fell in love with the first, the gameplay, the atmosphere, the pacing, everything drew me in...up until the cliffhanger extra scene that set up the 2nd game. Now as Yahtzee mentioned, the 2nd was good up until the half way when the "cult" plot kicked in, and upon completing the 2nd and replaying the 1st, I found out that the developers were always planning the cult plot, which kind of ruined the story for me.

Sly Cooper series: IT ENDED.
I have heard about a Sly Cooper 4 on PS3 but the problem is that although I grew up on my PS2 and still have the trilogy and play them every once in a while, for next-gen, I invested in the Xbox 360. I wish I could afford both consoles, but I just cant, and I REALLY want to finish the series because the original Sly Cooper was really one of my first video games and I have especially fond memories of it.

Teamfortess 2, um....complaint....The servers keep going down, and I can't find a fucking hat for the life of me.
Half-life, infact, alot of shooters, when I have only 1 health point down and I still use the entire health-kit.
Bad company 2: It was just hard to see things on the 360.
for TF2 just keep playin and they introduced a forge system you can make hats by combining three refind metals its a great way if you have allot of the same weapons

Team Fortress 2
Updates for the 360....please? I don't care if it's priced DLC, I just want new maps.

Mass Effect 2
The combat was a lot better, but I liked how you developed your skills better in ME1. Also, can we talk to people and NOT automatically have to come down to a "do you love me?". And at that, make it harder for people to fall in love with you. And more weapon variety.

And have the abilities have some unique characteristics. Not just "good against amour, good against shields and barriers, good against core health, good against organics, ect."

Resident Evil
Stick. To. The. Old. Recipe. I liked being scared, not having a rambo adventure in Spain and Africa.

Jak and Daxter series: The ubserd difficulty curve. Especially in Jak 2. Boner snapping frustration. Daxter can get on your nerve as well.
Especially the damn save system:

Game: Oh, you're on the final boss eh? Oh look, you died.
Me: It's cool, I can just re-do it.
Game: But without all the ammo you just used since I save when you die.
Me: FUUUUUUUUU-

And Shattered Horizon for the lack of Aussie players. I can probably think of more, but I don't want to go through all the games I own.

Metal Gear Solid Series: The fact that the game would never let me play it for more than 15 minutes at a time before making me watch a bloody in-flight movie.

Pokemon: New Badass plot (thinking bioshock here)/Reboot with ~200 ONLY new pokemon (no old ones at all) -- i know its a kids game, but this is what it would take for me to get back into it

Some things have been said about Mass Effect etc. which are just obvious, so im gonna go with

Elder Scrolls: Have a free casting call for gamers to lend their voice to the game so everyone has a different voice... I'd voice one for free

also for all FPS in general: I understand you are all really into your multiplayer now, and im all for pwning n00bs over and over and over and over and... but seriously, i havent played a good FPS campaign since Halo 1/Half Life 2... dont make me wait for Half Life (Episode?) 3 to play another one

Trauma center series.
The first one did not have difficulty settings and I found it absurd.
Truama team did not give me as much of an epic boss fight and the previous ones. Oh, and GODDAMN ENDOSCOPIES. Internal bruising, awaaaaaaaaaay!
