My fingertips are double jointed, and I can bend my pinky finger so far backward that it freaks people out. Sadly, it gives me trouble holding things in place and pressing buttons, as well as holding things like a pencil or chopsticks.
I could never hold chopsticks. Even when someone puts them in my hand for me, I can neither open them nor close them without using my other hand. I usually end up using a fork, which is simpler and requires less effort for the same, sometimes a better, result.
