Final Fantasy four was the best in my opinion, i had played final fantasy 1 as a child, and final fantasy two as it was aptly named on the super Nintendo, To this day the story resonates within me so well and its beautiful love story makes it all the better.
Though as i got older i realized the biggest reason i probably liked it was because it ripped off star wars.

I am curious as to why you said post VII, because people will simply ignore you and choose pre VII if their favourite game falls under it. Like this:

Definitly FFVII It's simply one of the best games I have ever played. After that FFI the game that made me a gamer.
I'm unable to choose between my three favourites: Final Fantasy VI, VII and IX. I really love all three of them. Unfortunately I've never been able to play part X and XII yet.
I liked VII cuz it was one of two RPG's i ever beat (i never get around to the end in others, the other being legend of legaia) X i got halfway through, VIII to the final boss (i think) XII i'm up to the final part, IV final part. I and II i never got very far. i think i got some of VI done, but it was on GBA rom or something like that on my old comp and i dont have it anymore.
EDIT and i didn't really like IX, but i didn't really give it much of a chance

Well i first played III ( i think.) on the SNES, but it was a long time ago 
But i recall it had great apeal to me back then.
Then when FF7 came out on PS1 i was hooked, not only on FF but gaming in general.
I played FF8 but with little success as my PS1 was slowly dying.
Played FF9 much later, i think if i remember by that stage i had a PS2.
Moved onto 10 and got the better part of the way through it, but never completed it.
Skipped 11, chose WoW instead.
Then i tried to get into 12,as i am a FF "fan" but i dunno if it is due to a poor quality of game or a persisting addiction to WoW that i have never really sat down and given it a "fair" try.
So for me I would say 3 for introducing me to RPGs and 7 for getting me to sit down and play a game start to finish.

Tactics was amazing, and my personal favorite just because I'm not a huge fan of most JRPG's straight turn based combat.
