umm, despite the lacking of color in it, i would go with black. And if possible, screw the Sith and Jedi's. They both are groups of over-confident assholes who get destroyed left and right. Mercenary master is what is up!

As much as I would like to be a Jedi, I know for a fact I would turn. It's just inevitable... It's something every force user has to go through, and I just know for a fact I would turn. It's not necessarily a question of will... it's something else... I mean, even Luke Skywalker turned... just for slightly different reasons.
Anyways, I will end with a brief - I hate that every single fucking Sith carries a Red Light Saber. For some reason it just kind of chaps my ass a little bit. I don't know why, it's just a little predictable. "Hey is that guy good or evil?"

Blue, because it's a relaxing colour and not too showy. My light saber would be longer than normal about a foot long and slightly wider at each end (sort of like a small hilt and pommel, made of a dark cobalt like material with a plain brown leather cord wrapped around the centre hilt of it.
I would then carry it in a strap over my right shoulder drawing it downwards. I wouldn't wear robes rather a flight suit (like the corellian one in SWFU) with a blaster pistol on a leg holster.

Lightsabers always bugged me...
They deflected blaster bolts, from which don't move as instantaneusly as bullets, and are very bright and easily seen and thus Jedi/Sith have an easier time of delfecting it.
But if you just walk up with a pfeifer zeliska .600 nitro express and fire one shot, they ain't gonna deflect that.
But they will have a nifty hair cut.

As a Sith, I would opt for a matching pair of curved-hilt deep red lightsabers. No sense breaking tradition, and, besides, who has time to worry about the color of your lightsaber blade when your only interest is in slaughtering as many people as possible with it? However, I would also carry several lightsabers from Jedi I had killed, so I'd probably wind up using several colors. Assuming I'm any good with a lightsaber in the first place, I'd have a nice collection.
Then, at retirement age, I would set up a shop on Korriban: Imp Spittle's Used Lightsaber Emporium. I would sell off my old lightsabers to Sith trainees and wannabes and watch them clumsily slice themselves in half out on the streets of Dreshdae.

Definitely black. And definitely a sith as well. They get to dress up in black robes a lot, and they're the side who seems to genuinely enjoy and appreciate the power of the force. Plus, its dumb that its apparently evil to use force lightning and choke.

I would have all of the colors in a backpack and switch to whichever ones I felt like using on that day. But if I couldn't do that, then probably dual wield yellow and green. I would also be a Jedi, but do whatever I wanted
