I do not see any appeal. In my opinion it seems like people make up reasons to watch it. Like "Oh, they have mature personalitie" no, they don't, that's just a fake reason to watch a cartoon.

Things like that are why the show's popular, along with the lighthearted nature of the show being a refreshing break from all the jadedness in our day-to-day lives. The characters are all very likable and relatable, with at least one character that a fan can personally identify with. For me it's Pinkie Pie, as I both love to make people happy and enjoy being batshit random. I can also relate to the abandonment issues she has, as I used to be heavily like that but without the "talking to bags of flour" part.
