You forgot X! Oh right, there's not enough slots. But you could have left out 2 through 5 because they weren't a part of anyone's childhood outside Japan.
Final Fantasy IX mainly because of the characters. Zidane was the most interesting protagonist of any Final Fantasy game by far. On top of that the issues of identity he had were incredibly interesting IMO. I also loved how it hearkened back to the old school days of FF and pulled it off successfully. The only thing that keeps IX from being a perfect game is the WTF boss fight at the end with Necron.
VIII comes in a close second partially because it was the first Final Fantasy I played. Other than that I liked the story and the junction system and Gunblades are badass.

Final Fantasy VII did just about everything right, and it didn't include any worthless 'supposed to lose' fights.
Loved IX the most for all the reasons already mentioned, namely the awesome/relatable characters and good mechanics.
VII was my first FF and VIII was okay, but it just seemed too easy to be overpowered in both of them.
I've only beat III, IV, and V of the pre-Playstation FFs, but I really liked VI's characters as well.
I loved X, thought XII was ok, and X-2's battle system was amazing in my opinion.

FFX I absolutely loved 10, it was my favorite PS2 game probably my number 8 favorite all time.

I'm personally very partial to IX and XII. IX was the one on the PS1 that gave me the greatest sense of enchantment with its story and characters, and the music was fantastic. Of course, you can say that about all the games that Nobuo Uematsu composed for.
As for XII, I love the writing, and while its characters aren't my favorites, it's one of the few where I would actually feel guilty for neglecting certain characters.
