If there was a larger VF playing population, I would totally be onboard with it. But as of right now, Tekken is pretty much dominating the 3D fighter market, and SF4 is dominating the 2D fighter market. (with GG and BlazBlu making storng showings)

The VS. games I think is just too divergent to really be categorized by it's own.

CVS and CVS2 were more like Capcom games with some KOF stuff thrown in.
SVC Chaos is basically a KOF game with some SF characters thrown in.
MVC series is a whole different kind of fighting game all together.
I'm not even sure what Tekken vs. SF is going to look like in the end of development.

I'm continuously surprised when people say that Smash is a simple game. I mean, sure, from the standpoint of just picking up the controls, and being able to do stuff, Smash is pretty simple. But when you factor in things like the wavedashing for competitive play, Smash is actually incredibly hard to learn.

Brawl and Melee both have air dodge and air throwing too, which adds even MORE layers of learning required. So I'm not sure if I would say that Smash is necessarily an easier game to play competitively.

Street Fighter is consistently the best series, Mortal Kombat 2 is probably the best single game, and King of Fighters is an underdog favourite.

I'll will have to agree with you about that ring out thing, i've lost many a matches from a cheap kick or throw (especially Kilk and The Apprentice. The clothing stats and weapon stats weren't too bad... but you normally have to make your characters look like douche bags before the stats are really high. Though i did manage to make a reasonable Cassandra class.

guilty gear..... end of story, GET SOME.

also, REALLY soul calibur. the game you spam buttons and the idea of combos is completely gone from it.

The button spam only really works with characters like maxie, trying that on line will only get you so far till some one recognizes the patter then your in for a world of guard impacting, soul crushing, critical finishing pain... yes in that order.

Smash Bros. It's a fighting game where learning a great long stream of button combinations and spend hours practicing them and getting the timing down just right is not nesseccary to beat the game on easy.

Street Fighter for me now, though when I was younger Mortal Kombat was by far my favorite (in retrospect the MK series seems so shallow, though I keep buying pretty much every instalment). Played a hell of a lot of the original Killer Instinct, Smash Bros. (it get's stick for beingg basic but 4 player fighting games like this and many wrestling games are fun party games), Tekken (esp. Tag Tournament), the DBZ Boudaki series (3 is an amazingly well balanced and tactical game which almost no-one played enough to realise - possible even the creators because the subsequent games have been pretty much broken). My second place would go to Soul Calibur, they've always looked fantastic and are easy enough for an unskilled player to pick up, but still have enough depth and tactics for a more experienced player.

I love fighting games, it's a shame that the genre doesn't have more widespread appeal.

Stats on weapons can stay, those are fine, but as you said, you have to make your character look like a douche to make them good. Often I got a character looking exactly how I liked, only to discover that their stats blew goats.
