You can try out Kannagi I think its from the same studio who made Haruhi Suzumiya.

Ergo Proxy for a serious "I'm not 100% sure what's going on but it's fucking awesome" sort of anime.
Gintama for being stupidly funny, although it has a lot of parody relating to Japanese culture/media the guys who subbed it were good enough to explain it all.
Wolfs Rain, depressing, best not watch it if you enjoy things being a bit more upbeat, but well worth it otherwise.

Berserk was pretty good, though you'd better read the manga. The art in the first few volumes lies somewhere deep in the uncanny valley, but eventually becomes one of the best.

Be warned, Miura takes a HELL lot of time to tell a story (running for 20 years now, and nowhere near a conclusion) and a HELL lot of time to release new chapters; around once every two months, if you're lucky.
I bloody LOVE the Berserk manga, it's got an amazingly messed up plot but the characters are beyond cool.
Monster was a gem as well, bit slow at points but well worth spending time on (even if the plot is rather far fetched).

Most of what I watch has already been mentioned but my other favourites are GetBackers and G.T.O (Great Teacher Onizuka) may be the greatest anime ever IMO.

Code Geass its a amazing show about Japan has been taken over and the Japanese people are treated horribly and a Kid who gets the ability to control peoples mind by making eye contact with them

Unfortunately some people insist on using it to bash anime, as shown in the news thread where that was posted. But agreed, anything not funny about that video is from people actually taking it seriously.

you haven't lived until you've seen Detective Conan, Cowboy Bebop, Samurai Champloo, Gurren Lagann,Baccano (SUBBED) Darker Than Black.

You don't know true fear until you've seen Baccano dubbed. Every bad, stereotypical Jersey accent given to a New Yorker kills this New Yorker a little more.

Also, I've heard that Bakugan, a really interesting manga about manga, and made by the same people who made Death Note, is coming out soon...

I really didn't like Code Geass. The plot sounded okay, the opening was amazing... "oh, this is really boring."

Bleach, full metal alchemist and code geass those are good in my opinion, check them out if you haven't...
EDIT: I didn't watch code geass R2 to the end because it was heading towards shitty ass bricks land...

Depends on what you like.

For sci-fi, I'd recommend either Outlaw Star, Trigun, Cowboy Bebop, Tenga Toppen Gurren Lagan, or Cyborg 009.

For action (and some fantasy), there's Fullmetal Alchemist, Bleach, Buso Renkin, Black Cat, Rurouni Kenshin, Samurai Deeper Kyo, Naruto, Samurai Champloo, or Tsubasa: Resevoir Chronicles.

For mystery/supernatural, we have Death Note, Case Closed, Paranoia Agent, Mushi-shi or xxxHolic.

And finally, for humor, we have FLCL, Axis Powers Hetalia or Excel Saga.

My favourites at the moment are
Lucky Star
Devil May Cry
Rosario Vampire
Chibi Vampire

Chibi Vampire I found to be interesting because the main character is a reverse vampire. I.E she has to inject blood into people rather than suck it

I have read the manga of Rosario, Chibi and Lucky Star and they are all on par with the anime adaptations. Although the Rosario manga goes for the more serious tone while the anime goes more with the romcom aspect.

Yugioh, subbed though. The dubbed (and censored) version is terrible. If you don't like the whole card games business that much try Yugioh season 0.
