I have watched all of 07-Ghost twice trying to content to dots but frankly it tries very hard to be ambitious with the main characters less so with the others, it dose have the boy love slant feel to it but its more fun that ZOMG BOY LOVE!!!....
and yes I know when I open my mouth its TMI.....but that's what is so much fun about me

FYI I been up all night had 4 cups of coffee and getting ready to sleep the day away because I am having trouble staying awkae and all..so if I am rambling more than normal.....
I really liked the Hellsing TV series it might have had a crap end but the OVA is jsut dumb....but then again its more for the manga/comic/crazy fans.....mannaroth said:

I just thought the whole show was really cute, except I felt Mikage coming back as a dragon or whatever that was, kinda spoiled the sadness of his death.
Its a pretty solid show but the whole bishie thing is going to turn off some, thus why I mentioned it.

I think you need to detail a lil more what you want in an anime and what you do not want in an anime, or everyone will just list their favs. I only know Death Note from your list, which says to me you enjoy a thoughtful suspense thriller.. I would say Death Note is pretty unique, as far as I know, kinda in a class by itself. Have you checked out the Live Action movies?
As many have said already, can't go wrong with FullMetal Alchemist, arguably, best anime of all time ftw, as well as getting a brand new series coming to America in May 2010 I believe. Any movie by Studio Ghibli.
Excel Saga, funniest anime, potentially funniest thing you will ever see. Escaflowne, Fruits Basket, Romeo X Juliet, best romances. I enjoy Bleach, Slayers,
the multiple dot hack series, an anime based on a video game are pretty thought-provoking, There's .hack//Sign, .hack//Legend of the Twilight Bracelt, and .hack//Roots. Probably more. Roots is the most recent, more action packed than Sign which I've seen. Have not seen Bracelt yet, but it seems targeted for a younger crowd than the others.
Wolf's Rain is also a deep thought provoking anime you might enjoy. Look into that one.
Funimation's Youtube channel has a lot of its anime up for free, including FMA.

I hate to admit it but it seems I know a decent amount about animé. So I'll try to suggest a few based on what you listed:
Bleach - Great to start, gets rather stupid... but its still fun to watch if you have a few days with nothing to do.
Tengen Toppa Gurren Lagann - Every three episodes it gets more ridiculous, but for some reason that's a good thing.
Lucky Star - Slice of life fun with theme catchier than swine flu'.
Wolf's Rain - I thought it was a bit bland, but a lot of people like it.
Higurashi - I'd say "murder mystery", but it's a bit more than that.
I'd say Chobits but its very mixed up in what it wants to be. Some is pervy comedy, some is thought-provoking monologue on artificial intelligence, some is girly romance and such.
And this reminded me, in all its geeky glory, to watch Sengoku Basara at some point soon. Thanks, Internet!

Casshern Sins was ok for a while: self-aware androids confronted with some all-consuming corosion which passes for death to them for the first time and having them desperatly cling to their artificial lives. I couldn't watch is very long, because every one, ESPECIALLY the protagonist, kept whining and angsting about the Ruin (as the corosion is known) to an insufferable degree.
Berserk was pretty good, though you'd better read the manga. The art in the first few volumes lies somewhere deep in the uncanny valley, but eventually becomes one of the best.
