start with the obvious, it's old as hell but might just bring him over to the dark side... star wars: the manga
fist of the north star is another one, manga, anime, new, old, they all look pretty similar
definitely show him death note
get backers, nice anime with a good pace and the dubbing isn't too bad
... if all goes badly go to the ones everyone has probably seen... pokemon, digimon, dragon ball Z

I think "To Aru Majutsu no Index" might suit him, but you may want to hold off on "To Aru Kagaku no Railgun" until he gets a bit more relaxed.

I definitely suggest Hellsing. It's short (only 13 episodes)and each one is basically full to the brim with action. Not to mention that Alucard is probably the most awesome badass ever, if Alucard doesn't make your boyfriend like anime, I don't know what will XD

Some other things he likes, for inspiration:

- Star Wars
- A Song of Ice and Fire
- Pulp Fiction
- The Sopranos
- WoW

Any help would be greatly appreciated!

I like to pop Anime Cherries with Cowboy Bebop or Death Note then work into Trigun, Berserk, Samurai Champloo, Ninja Scroll, Last Exile, Gungrave, Hellsing and Ghost in The Shell.

After you get him to watch that, you can slowly introduce him to the "wierd" shit like Gantz, Evangalion, FLCL, Lain, Elfen Lied and Excel Saga.

If he's into the space ships and Mecha aspect of Star Wars, you can try Blue Gender, Cowboy Bebop, Venus Wars, TriGun and Ghost in the Shell (series or movies, doesn't much matter).

If he's into the story aspect of Sopranos I definitely reccomend Death Note, Wolf's Rain, Fullmetal Alchemist, GunGrave and the first sixty-four or so episodes of Bleach (after that the series just goes to shit, imo). MIGHT try getting him to watch the Samurai X OVA's (series is a little childish for fresh anime-watchers and long as fuck to boot).

If he likes the high fantasy of WoW, definitely get him to watch Escaflowne, Vampire Hunter D: Bloodlust, Claymore and Bastard!.

If nothing else, make him watch Cowboy Bebop. Everybody loves Bebop.

Baccano!

It has a fantastic English Dub so you're set there. It's set in 1930s Chicago and has gang wars, a train robbery and a touch of alchemy to keep things interesting. It also has the hilarious comedy duo of Isaac and Miria. It doesn't really have any of the generic anime cliches that he would hate either. A perfect anime for him IMO.

More info for ya: http://myanimelist.net/anime/2251/Baccano!

i would have to say start him out on naoki urasawa's monster, it is long but you would not know it was anime except for how it was drawn. Its a kind of like the sopranos and is worth getting into because it is one of the only animes that anyone can get into. then after that he should try ghost in the shell, after that cowboy bebop. monster is mostly talking, story, characters, and philosophy, and ghost in the shell is mostly philosophy, music, and action. i would say also after a few animes let him watch serial experiments lain.

to show how good monster is for starting out into anime and watching anime in general, my mom hated anime but then i showed her monster last year when it started airing on syfy and she cant wait to watch it every week.

I've said it once and I will say it again:
Tengen Toppa Gurren Lagann
It's an anime about giant robot battles and ultra-macho 'bro' relations. It has some great, memorable characters and enough Sci-Fi mumbo jumbo to keep a Star Wars fan interested. It's relatively short, only 26 episodes and it's just fantastic. He will geekgasm when he sees Gurren Lagann transform for the 1st time or when he does "Giga Drill Breaker"
Just watch this clip:

It speaks for itself.

I'm recommending this because I have similar tastes to the ones you say your boyfriend has and TTGR is the anime that made me realize that not all anime is an arduous experiment in tediousness

This I would recommend after he eases into the genre somewhat but yes, TTGL is one of the greatest things ever and the best anime of all time.

I would recommend Ghost in the Shell: Stand Alone Complex series and then 2nd Gig. The animation style doesn't go for the over exaggerated eyes and it has a more slightly mature theme. It has a small amount of humor to it as well.

Welcome to the NHK
I loved that one. It's not even the kind of story I usually like, but it was a great mixture of hilarity and solemnity.

I'll pass on Death Note, Code Geass, Black Lagoon, and Cowboy Bebop since they've already being repeated so thoroughly.

Does Shin Angyo Onshi have an anime? I remember a couple years ago that the anime was coming out. Or maybe that was a movie? Anyway, magnificent, and certainly not for children. It's dark and bloody, but lovely.

Edit: Yeah, it was the movie, not a serialized anime. But still worth watching!

Outlaw Star was among the first anime I watched, and I actually like the English dub version better than the original Japanese.

Elfen Lied is truly the best anime I have ever seen. I have found few other animes that have held my attention so well.

Cowboy Bebop is what convinced me that anime isn't that bad, and trust me 2 years back I was very outspoken against anime because I thought it was a bit weird. But not all anime sucks. There are a few diamonds in the rough per say.

Outlaw Star. The character designs aren't way overboard, and it has a neat sci-fi space western thing going on. The dub is decent, but the best part is how it handles the "wierdness". It will gradually introduce him to all those anime things he doesn't like, while staying familiar enough for most of the series that he won't totally freak out. By the time the really strange stuff starts happening, he'll be too into the show to want to stop watching.

When will people ever learn that the default choice for an anime that isn't "kawaii~ ^_^ with big eyes and chibi characters weee!" and one that isn't really weird, in a mindfuck sort of way, too, is Death Note?

Or that's at least the only one of that sort that I've watched.

Don't bother?

I mean, seriously, don't bother. That's the best advice you'll get in this thread. Some people just don't like certain things, it might even extend to not liking an entire medium. I know you'd want to enjoy sitting down watching these shows with your boyfriend, but there are a lot of men who'd like their wives/girlfriends to be able enjoy football with them (proper football that is, I don't know about your American "wuss rugby"). At best it'll make you seem overbearing, and at worst controlling. No one likes either of these things in a relationship.
