Definitely go with Cowboy Bebop. It's a great starter, one of the first animes I saw and part of what got me into watching it.

One of the few anime that I watched and actually liked was Hellsing, so I say you go with that. I can't think of any moment where they used any sort of exaggerated expressions, and you really just can't go wrong with Alucard.

Hellsing, Hellsing, for the love of GOD: Hellsing.

I have yet to meet the person who doesn't at least get entertained by that one. And, it's a personal favorite of yours truly. ;D

I've said it once and I will say it again:
Tengen Toppa Gurren Lagann
It's an anime about giant robot battles and ultra-macho 'bro' relations. It has some great, memorable characters and enough Sci-Fi mumbo jumbo to keep a Star Wars fan interested. It's relatively short, only 26 episodes and it's just fantastic. He will geekgasm when he sees Gurren Lagann transform for the 1st time or when he does "Giga Drill Breaker"
Just watch this clip:

It speaks for itself.

I'm recommending this because I have similar tastes to the ones you say your boyfriend has and TTGR is the anime that made me realize that not all anime is an arduous experiment in tediousness
This I would recommend after he eases into the genre somewhat but yes, TTGL is one of the greatest things ever and the best anime of all time.
This. Definitely. It will blow your mind (or whoever's mind is watching). I have not found a person who watched this show and didn't enjoy it. Hell, even the uptight intellectual guy liked it.
Unfortunately I have. We consider him defective. D:
He is not human. Greatest thing on the planet. What you would call fanboying for other things you can call regular fandom for Gurren Lagann, because it's that awesome.

Y'know the Courage Wolf "Climb the highest mountain, punch the face of God?" Well, it's like that.

Pshh, have him watch Cowboy Bebop. By the time Ed makes it on the scene (she wasn't there right from the beginning was she? It's been a while since I've watched the show) he'll be enamored with the likes of Spike, Jet and Faye.

Even if she was there from the beginning he'll get over it if he keeps an open mind.

I got my mum hooked on FMA by getting her to watch the first episode, that thing's just epic.
Need to get around to watching Brotherhood, too...

One of my personal favourites? Now and Then, Here and There.
Starts off like a Miyazaki (young boy gets magically whisked away to another world with a mysterious girl) and ep 1 probably embodies everything your guy hates in anime, but all that changes (drastically) from ep 2. He gets captured by the military police and it goes from magical adventure to gritty wartime exposé in the space of about 20 minutes. Very powerful.

Also, 13 episodes and practically no filler at all (after ep 1).

Finally, playing wow but shying away from anime, I just had to dig this up:
http://www.penny-arcade.com/comic/2001/12/14/ :D
Haha! That sums him up perfectly, actually. I have a hard enough time getting him to admit he's a nerd (though he plays video games, paints Warhammer, reads fantasy epics and wishes he were a Jedi). Playing a game with pretty colours and cutesy characters? Never gonna happen. I remember the first time I told him Pokemon wasn't a girls' thing. He almost fell out of his chair when I told him the cute little animals beat each other into submission for fun.

Although in this day and age, WoW is actually on the colourful end of the spectrum, which is kind of sad...

Funny you should mention Pokemon actually. I avoided Digimon as just a Pokemon rip-off until I saw one guy get impaled and his handler go insane. Her eyes still haunt me at night.

But yes, looking at his CV there, welcome to Dorksville! I like the Jedi bit especially, it's a nice touch.

hmmm, anime, the 2 I'd suggest if they haven't been already would be

Shuffle! - romantic comedy about a boy who has several girls who want to go out with him, what's not to like? well, obviously there's a lot more to it than that and the plot gets a bit fucked up and confusing around the middle but it's a believable story with some supernatural elements.

Elfen Lied - horror anime about a weapon/supernatural being called Lucy who escapes from a containment facility but gets shot in the head in the process causing her memories and personality to split.

Akikan! - this was one I really enjoyed and it's the series that sold me on anime.

This may alienate yourself a bit, but I would give him a healthy dose of Hellsing Ultimate.

Go for Baccanno. Really good story, character driven, pretty much no anime-tropes and its setting is prohibition USA. Also, its SHORT, 12 eps I think.

Seven pages and I've yet to see a few I would have recommanded. But here goes:

Excel Saga- It's suppsoed to be over the top, slap-stick comedy. A dude pulls two M-16s out of his afro and another finds out his dating sim is a bomb. If you have to get someone into anime with a full kick in the pants, this pokes fun at every cliche he hates. Other than that, good comedy and you can both just laugh together about it afterwards.

Afro Samurai- There really isn't enough of this serise. It's so good! Mostly either bloody fights or lots of talking. Real shame there's a lot of talking. But it has the Mother F**king Jackson, TWICE OVER, so that makes up for it.

Avatar: The Last Airbender- Though not truly anime, it's a good ease into it. Avatar has a lot of traditional wuxia themes and brush strokes of what makes eastern storytelling so beautiful. Because of its American influence, it also appeals to more western minded individuals. Essentially, a mix of great things from both cultures to make a great introduction to eastern animation.

Dragonball Kai- It's Dragonball Z with the filler cut, so it means only the awesome stuff got through. And who doesn't like crazy martial arts and giant beams being shot at planets? This is more of a risky option because of how shallow it tends to be, but every guy can usually appreciate shit blowing up while guys kung-fu fight.

MY PICK: Fate-Stay: Night- This! This, this, this! Though not my introduction into anime, this is what gave anime a heartbeat for me. Heroes from western cosmology fight to the detah when mages summon them to their time to win one wish from The Holy Grail. Though there is certainly some artistic choices he may not like with how they twisted the cosmology a tad, it's certainly still a solid anime. It sticks to primarily western characters, so it's always fun to guess who's who (a hero tries to hide their name as that would give away their unique abilities) in the ensuing melee. It also gives a fair bit of BESM and some Japanese cliches, so he can start getting situated with that. Overall, I loved it because i'm big into mythos and this serise did not disappoint.

Also, as a side note, congradulations on being confident enough to try and broden your boyfriend's tastes! Too many girls are either far too forceful about it or too dominated to do so. You seem to be even keel about the whole thing and your boyfriend is a lucky guy! =D

Well, they actually do. With a drill. Especially in the second movie.

I'd love to get him into some anime. I know he'd love Cowboy Bebop, but I'm worried that Ed would scare him off for being the bundle of anime-ish-ness that she is. I also think he'd quite like Fullmetal Alchemist, but I think the whole show is just a touch too anime-ish for him to get into just yet. Some other things he likes, for inspiration:

- Star Wars
- A Song of Ice and Fire
- Pulp Fiction
- The Sopranos
- WoW

Any help would be greatly appreciated!
First off let me congratulate you on your most excellent boyfriend picking abilities. Anyone who likes The Sopranos instanly gets an A+ in my list.
That said, I don't like anime so I can't recomend any :(
