Jigoku Shoujo, aka Hell Girl, is really addicting to watch. Has some really sensitive episode subjects though.
Elfien Lied is Beautifully gory. Tad nudity, not for the feint of heart.
D.Grey-Man is definitely one of the best animes I've seen. I haven't seen it in awhile but I want too =P
Soul Eater is hilarious and serious at the same time. Just a perfect blend really.
Blood+ is another really good anime.

Edit: Also, it's best to watch any anime with the real Japanese voices. American voice actors tend to screw up the voices. Though every once in a blue moon, they do well.

I highly recommend One Piece. It's full of action, interesting characters, and it's funny!
I second this as long as it's the Funimation version.
Yes, thank the lord they're in control now and not... *Shudder* 4Kids.

Also, for those of you unfamiliar with the 4Kids dub, check out this guy's videos:

http://www.youtube.com/user/Tsukento

They're the worst of the worst, which is not to say that's ALL that's bad with the 4Kids version. FUNimation is fixing some of this stuff, but...

Comedy- Azumanga Daioh or Fruits Basket
Action- Ninja Scroll, Berserk, Vampire Hunter D: Bloodlust, or Samurai Champloo
Pure Unadulterated Violence- Amon: The Apocalypse Of Devilman
Drama- Princess Mononoke, Death Note, or Cowboy Bebop
Giant Robot- Gundam Wing( Neon Genesis Evangelion maybe be a bit too....weird.)
Romance- Fruits Basket(Honestly I'm not good with recommending romance series since I don't watch many)
As per my contract, signed with ink mixed from my own blood and the tears I shed at volumes 6, 10, and 12, I must strongly recommend the Fruits Basket manga over the anime.

...so, how 'bout them Knicks?
Well, of course the manga is better because it has Rin, but the OP was asking for ANIME, not manga.

I know. I was just vaguely disappointed with the anime. Sorry 'bout that... ;_;

I'll recommend The Tower Of Druaga, just because I know that no one else will. It's a continuation to the story of the old tower of druaga game from the 80's. Massive nostalgia man.

I'm sure it's probably been said many dozens of times, but DragonBall Z rocks. It is, straight up, the perfect cartoon. Ok, admittedly, the Frieza saga has some pacing issues (seriously, 5 minutes can span up to 10 episodes in that saga), but, especially now that you can buy the seasons and marathon them, you'll understand why with the richness of the material. Good stuff. And when Goku comes home from otherworld and meets Goten for the first time? I had tears in my eyes. FUCKING TEARS! God, I can go on about that show forever. The only show that still holds weight into my 20's from when I was like 10.

Samurai Gun!

I hate things like Naruto and Bleach that never end and the fudging fillers. I prefer short series like Samurai Gun.

I think anime is largely a medium that I will continue to hate, but there are a few anime series that have pierced my cold heart.

Hellsing is fun to watch the psychological drama unfold as he destroys the mind of his foes instead of just killing them.

Ghost in the Shell has an interesting story and is Cyberpunk.

Cowboy Bebop had an interesting story, interesting characters, and an interesting setting.

I really like Satoshi Kon's work. The ones I have seen are Millenium Actress and Paprika, both of which are fantastically animated and bending the border between fiction and reality.

Avoid Naruto, Bleach, One Piece, Dragon Ball Z, Yu Yu Hakusho, Eureka 7 anything along the lines of school drama if you don't like one you don't like any of them
Eureka Seven is a school drama? How? Also, One Piece is rather dissimilar to the majority of the other series you listed.

You can also give Rebuild of Evangelion a go. It's basically a remake of the series in the form of 3 or 4 movies, with a way bigger budget then the original show had and some pretty noticeable changes to the plot. So far only the first movie is out.
I do, however, recommend Rebuild. It's a lot more somber, and the are a lot of subtle touches that make the characters (even Shinji) a lot more like able.

[fanboy]Plus, it's directed by the same guy who directed FLCL, so you know it's good.[/fanboy]
They make Shinji likeable? Impossible!

EDIT:

I'd recommend Last Exile if you enjoy steampunk crossed with cyberpunk.

Cowboy Bebop had an interesting story, interesting characters, and an interesting setting.
Samurai Champloo is much the same as Cowboy Bebop. Just replace bounty hunters with vagrant samurai, space with Edo-period Japan, and jazz and blues with rap and hip-hop. And little violence with LOTS of violence.

I know, I was shocked as well. It was a lot of little things, small personality adjustments and some great voice acting.

Let me give you little example.

In the scene were Shinji is told he has to pilot Eva, in the series he looks and sounds like want he wants to run off and cry, while in Rebuild he looks and sounds like he wants to punch Gendo in the face.

It's a lot of small stuff, but I feel it's a great improvement on his character.

Edit: I wonder if they can make Asuka like able in the next movie.

I signed up just to post this. Go me.

Akagi. A gambling anime about Majong. Heavy in suspense and badassery.
Afro Samurai/Afro Samurai: Resurrection. Action anime, not much story. Tons of style. Great english version with big name voices. (Samuel L. Jackson plays the main character.)
Baccano! One of my personal favorites. Pulp fiction set in 1930's about immortals and murder mystery. Great english version.
Beck: Mongolian Chop Squad. About a band and it's rise to fame. Fantastic series that even non-anime fans can enjoy.
The Big O. Mecha series with steampunk mechs and great characters.
Black Lagoon. American influenced gunslinger series. Good english dub.
Cowboy Bebop. This series is perfect. Watch the english version.
Detroit Metal City. Comedy series about a Japanese kid who likes trendy Swedish pop music, but ends up as the lead singer in a death metal bad. Rape jokes follow.
Golgo 13. Badass assassin. Insane manliness and sweet gunplay here.
GunXSword. Average story, but great characters and action. Not much to say about it.
Gungrave. Based on the video game series, it tells the backstory as well as the main storyline of the games. Start from episode 2 for max experience. If you like mafia stories, go for this.
Kaiji. Just like Akagi, it's a suspense series about Gambling. From the same creator.
Le Chevalier D'eon. Deep storyline, great rapier fight scenes, beautiful backgrounds of a early France, and a fantastic story. An underrated masterpiece.
Mobile Fighter G Gundam. Watch this in english. Unlike most gundams, about war, this is a one on one fight series with ridiculously over the top action, and racial stereotypes that can't help but be hilarious. (Canada has the Lumber Gundam, America has a boxing/Football player gundam, etc.)
Noein. Heavy on story, Noein is a story of multiple dimensions/timespaces and quantum physics. Avoid if you hate series that will make you think.
Read or Die. Go for the movie/OVA series, it's about a secret agent who can control paper to fight. Pretty good plot, great action.
One Outs: Baseball anime, but about psychological attacks over boring typical sports shit.
Samurai Champloo. Samurai action, heavy on combat. Same creator as Cowboy Bebop.
Scryed. Over the top action. Nothing more. This show is one big fight.
Tengen Toppa Gurren Lagann. I don't need to say anything, as I assume many people already brought it up. Personal favorite series.
Top wo Nerae!/Gunbuster. Oldschool series, Gurren Lagann draws heavy influence from it.
Top wo Nerae! 2/Diebuster. Even more over the top, and inspired Gurren Lagann a lot more than Gunbuster.

Not such a good list if you're looking for typical DragonBall Z styled stuff like Bleach, Naruto, One Piece, etc, but if you want some good series, try these.

I'm sure all of he must-see animes have been mentioned already, but I'll say them again in true parroty fashion XD

-Trigun
-Samurai Champloo
-Cowboy Bebop
-Outlaw Star
-Full Metal Alchemist
-Elfen Lied

And lastly, Berserk. Although the gawd-awful ending made me want to spoon out my eyes and stick my head through the telly, it was freakin awesome.
