Recommend me anime!

Yeah, it's another one of these.
Except I need recommendations on what to watch with my girlfriend.
So far we've watched Code Geass, Gundam Seed, and most of Magical Girl Lyrical Nanoha. All series for all animes mind you. So she doesn't mind big robots =p
I've got Eureka 7 lined up next, but I'm struggling to think of decent ones, and google only tends to give brief summaries that probably don't do the series justice.
So citizens of the Escapist, please could you recommend one or two (Or more if you want) Anime with a summary that does it justice? Y'know, premise, theme, series length, etc.

Go ahead and pick whatever you like as an anime No specific desires, I just want good recommendations.

The only anime I ever really loved was Cowboy Bebop. The rest of the genre continues to struggle unsuccessfully to grab me.

I'll recommend Higurashi no Naku Koro ni and Higurashi no Naku Koro ni Kai.
Meant to be a bit of a horror animé, but I didn't find it too bad.
It does have some good characters, and interesting story, and a bit of blood/gore.
Edit: Oh, and only watch it subbed, the dubs are an absolute butchery >.>

Chobits

... its really, REALLY nice. It has loads of charm and is really funny not to mention it looks great. Loved it.

Oh and dont let her watch Gundam Wing Zero. She fall in love with all the preaty boys and try to make you dress up like them.

It's 48 episodes long, and revolves around daily life, humour, drama and romance.

If you just want something fun, watch FLCL (Fooly Cooly)
It can't be explained, but it's only 6 episodes long.

I support the Lucky Star comments. It's about a gamer girl in High School, and her group of friends. A lot of references to things in it, and was pretty funny. Plus the main character is adorable.

If you like Lucky Star, The Melancholy of Haruhi Suzumiya is another good series. About a girl who has the ability to alter reality, the guy who is kinda forced to go with her to prevent her from doing anything drastic, his Alien buddy, his Time Traveling buddy, and his psychic buddy.

watch DBZ kai... so much faster, not as much filler.
watch um. you should totally watch berserk with your girlfriend, it's filled with beautiful scenes about love... with no rape and no fetish about choking, or any gay overtones between the main character and his rival. Nor does it end with the biggest fucking cliff hanger ever that makes you wanna slap the closest person to you
