I'm sure most of these have been mentioned, but some must-sees are Blackadder, Black Books, Fawlty Towers, Monty Python's Flying Circus, The Two Ronnies, Porridge, Red Dwarf and Dad's Army.

peep show is the daddy of modern British comedy imo.
I dont know alot about older British comedy although this thread seems to be filled with others who do so in that regard your pretty sorted.

oh ye and anything by Charlie Brooker,hes not a comedian exactly,but a fucking funny journalist.

Come on Boosh is so emo/ scene it fucking hurts! It doesn't stop it being occasionally funny though.

Black Books - this show is amazing, box set of all three series is going for E20.

Fawlty Towers - the daddy of British comedy, and the best side character ever in the form of Manuel.

Father Ted - technically British, but the writers and most of the cast were Irish. Stupid 80s Irish government wouldn't give them money.

Blackadder -

The Mighty Boosh - a good bit weirder than anything above. Try the episode "The Legend of Old Gregg", and if you laugh, it's for you. If not, there's no shame.

Blackadder. A million times Blackadder. It's the show that got me into British comedy. Oh, and 'Allo, 'Allo. That show made the French Resistance funny.

We Are History is epic, my favourite one was the Norman invasion when he theorised that the Normans can't have landed at Hastings because the Ferry does go to Hastings it goes to Dover then they recreate the battle with some French exchange students and frisbees. Classically funny from Marcus Brigstock, possibly Britains 2nd finest comedian (the first being Stuart Lee).

Anything Written by Graham Linehan is pretty good. The Inbetweeners is great, mostly because i identify so much with the protagonists. Spaced is good. 15 Storeys High is also a must watch. Sean Locke is quickly becomming one of my all time favourite comedy performers.

And ofcourse there are the classics:
Red Dwarf
The Young Ones
Blackadder
The Two Ronnies (the Mastermind sketch is one of the greatest ever)
Monty Python

They've all been mentioned before however. Nothing new to see here.
