Okay, I'll grant that it's pretty impossible to ignore fanservice in an anime whose opening actually features a bullet passing between the jiggling breasts of one of the female protagonists, but if one can tolerate the fanservice it's got a fair-to-middling plot behind it.

Well, according to what I've seen from your choices, you seem to prefer anime that utilizes action, supernatural phenomena or powers, and dealing with psychology as with Ergo Proxy and Elfen Lied.
Now I can't really offer too much because frankly I enjoy a lot of different types of anime, but as others have said:

If you're looking for a gritty but realistic action show then I'd recommend Black Lagoon. For something with a bit more humor then I'd go for Cowboy Bebop and maybe even Desert Punk (but if you don't like exaggerated art styles then Desert Punk might drive you away).
I'd also recommend the Hellsing OVA's (TV series is good aswell, but the OVA's are FAR superior)

Baccano! - A moderately paced action/ suspense show. If you like Darker than Black and Death Note, then you should like this. It's told out of chronological order, though, and that puts a lot of people off as it is a bit hard to follow.

Durarara!! - Spiritual successor to Baccano!; longer, more refined, but ultimately not as good. It's about a suburb of (?)Tokyo, and the interesting and disparate characters who frequent there. Love it for the way it makes the city out like a living entity.

Berserk - Absolutely horrid animation, but if you can tolerate that it is a truly beautiful story with many layers, and a good deal of gore when it's called for. Set in a high fantasy world, except for the first episode's dark fantasy corrupted world.

Black Lagoon - A show that seems more tailored for "western" sensibilities, about a mercenary group. Lots of gun-toting action, and well fleshed-out characters. It consists of a number of vaguely related story arcs with a wide range.

Fate/Stay Night - a modern fantasy series about mages who compete in a war for the holy grail by summoning the heroic spirits of legendary warriors. The anime isn't actually that great, but the franchise as a whole is excellent, and this is as good a way as any to be initiated into it (or to see if you like it at all).

Fate/Zero - Prequel to the above. It is recommended but not necessary to know the story to Fate/Stay Night beforehand. This anime is truly excellent, with very good animation throughout, an engaging cast and an emotionally affecting storyline. Not without issues, but one of the best things I've seen.

The Last Exile - This is a bit of a stretch based on what you say you like, but it's well worth a mention. Great steampunk world and appropriate atmosphere, put is poorly paced and the story goes into a major lull halfway through. Recommended for steampunk fans, though.

Neon Genesis Evangelion - Dark, psychological, reflective, giant mechs. Extremely divisive, but something everyone should give a go. Some people don't like the slow pace and spineless (but not without justification) main character. Great representation of what would really happen if you put the fate of the world on a fourteen-year-old's shoulders.

Paranoia Agent - A show about collective consciousness in a media-saturated society. Slightly predictable, but only because it follows its theme in an internally-consistent way right through to the end.

Planetes - Near-future, hyper-realistic sci-fi. Terrible first few episodes, but becomes one of the most affecting shows I've seen. Themes of loneliness, aspirations, and the consequences of a heavily globalized, capitalist world.

Spice and Wolf - Another stretch based on what you listed. Consists of a merchant traveling around a medieval world with a pagan wolf-goddess as his companion and their conversations. Very witty dialogue on the whole and... Economics made interesting..?

Tiger and Bunny - Heavily influenced by the western super hero tradition, set in a city where super heroes have become commercialized and star in a reality TV show. Good mix of action and drama (but emphasis on action, with some nice animation).

Welcome to the NHK - My personal favourite. A dark, psychological drama about a shut-in. It kind of requires you to be reasonably well-versed in all things anime to really appreciate, but if you can personally relate to the main character, it will hit you like a bomb. The most depressing thing I've ever seen. You can tell that the book the show is adapted from was written by a real shut-in.

Mahou Shoujo Madoka Magika - Also called Puella Magi Madoka Magica. Basic premise of your typical magical girl show, but shown through the lens of the Faust story. Very dark, and if the art style doesn't make it completely unwatchable, then it comes highly recommended to absolutely everyone who likes an emotionally wrenching story. Personally, I think the art is one of the shows strongest assets because of the contrast with the content. Could use some better animation, though. You'll know if it's your kind of thing is you watch 'til the end of episode 3.

Oh god that was a long type-up... But I'm fairly confident those are similar enough to what you listed that you can find a couple you'll like based on my descriptions.

I only brought it up because I only recently finished watching it. Again. Sure you're right in that you need fairly high tolerance levels for the fanservice, but what I think you need more tolerance for is the zombie genre in general. Its been done to death. Sorry for the pun. But there are elements to the show that are actually interesting. Most of it when it isn't actually focussed on the boobs undead.

And yes, totally check out Darker than Black. Out of all the anime recommended to me by one of my anime nut friends, I like this one the most. I have particulalry high standards in that regard too.

Forgot to include Guilty Crown - it's a lot like Code Geass with "power of the king" and an oppressive military rule over the people as well as a band of rebels

Well...damn. I was all excited about introducing Ranma1/2, my all-time favorite anime to someon-...No, wait. I don't THINK it has those specific cliches. Except for maybe the sweat mark, but it's more like actual sweat. And the only time anyone grows giant is during a fight.

So yeah, Ranma1/2. It's about a martial artist who changes genders because of a curse. And his idiot of a father sold him/engaged him to a bunch of different people for food and money, with no intention of honoring any of them. It's by Rumiko Takahashi, author of more famous works Inuyasha and Urusei Yatsura. And it is more comedy oriented after the first couple of seasons. Also there are about eight or nine seasons.

And about Bleach. Don't judge it based on the first episode, it gets better. WAY better. And then kind of declines in the more recent chapters, but it's still good.

I would also recommend Evangelion, but I warn you that it gets... odd... toward the end. Very odd. Kind of disappointing, too, if it isn't up your alley. The rest of series is certainly worth it, though.

I'd also recommend FLCL, though I would recommend it to anyone. Sure, it's a bit on the exaggerated side, but it's short, so if you don't like it, it's not like it's a commitment and it makes up for it by being... well, ingenious.

And that's about it. This makes me realise how many of the anime I watch are exaggerated...

I would recommend Gurren Lagann too, but that's very, very exaggerated. And it would make me seem obsessed with Gainax. Which I guess I am.

Black lagoon is very good. It take some influence from john woo and could be considered similar to Bebop but more grounded in reality. Highly recommended.

Thanks for the recommendations.

I have bought both seasons of Ghost in the Shell: Stand Alone Complex (you can probably see how much I like it).

I am down to the final three episodes of GITS:SAC, and I have ordered Neon Genesis Evangelion, although I had to get an imported copy due to it literally being impossible to buy from any UK retailer that I checked (we have a very limited "anime scene" here, unfortunately).

From what I have seen, there are some extra dvd's for them too, alternate endings as such. Are they worth looking into if I find I enjoy it?

Can't recommend Cowboy Bebop enough. It's extremely 'real' in terms of feel, animation and physics, and has some real visual poetry to it.
