Chaika is a goof recent show, doesn't have fanservice and the plot and characters are awesome.
Watched the first season that has been aired. It was meh to me, but I'll still probably watch the second season in contrast with what is out right now at least.

Well, as for great action series I'd recommend the always excellent kaleidoscope of stories and genres that is Baccano! [http://www.escapistmagazine.com/articles/view/editorials/reviews/anime/6404-Anime-Review-Baccano], dark fantasy epos Fate/Zero [http://www.lostinanime.com/2012/06/fatezero-series-review.html], as well as the more subdued noir thriller Monster [http://www.themanime.org/viewreview.php?id=969].

I also heartily recommend the superbly atmospheric physiological horror mystery series Higurashi no Naku Koro ni [http://www.escapistmagazine.com/articles/view/editorials/reviews/anime/6503-Anime-Review-Higurashi-When-They-Cry], which basically start out by beating the moe out of it. Only great Slice-of-life series I know of is Usagi Drop [http://www.animenewsnetwork.com/review/usagi-drop/episodes-1].

Spice & Wolf [http://www.themanime.org/viewreview.php?id=1055], Steins;Gate [http://www.animenewsnetwork.com/review/steins-gate/episodes-1], and Kara no Kyoukai - The Garden of Sinners [http://www.escapistmagazine.com/forums/read/326.304952-TYPE-MOON-Review-Anniversary-Kara-no-Kyoukai] are always worth a look.

LOL... ALL the OP listed has their fair share of "fan service." You can't escape it, it is their style. Maybe not to a gratuitous level, but it is there. Admittedly I think I know what the OP meant, it is getting ridiculous these days.

Also; some good light-hearted anime out there dude, not all the "harem" anime is garbage (although admittedly most of it is.)
Yes, I wrote that list knowing each one had a fair amount of fanservice, however the story heavily outweighed the amount of fanservice in those titles in particular. To clarify on what I mean by fan service, I mean HOTD fanservice, pantyshots, excessive cleavage, excessive breast grabbing and the underlying premise of a protagonist pervert.

It is a masterpiece after all.

OT- I think that once you've seen that much anime, it's about time for you to put on your big boy pants and wade through the shit like the rest of us. Or are you too good for that? You too good to watch and immediately dismiss Daimudar (or however that is spelt)?

Now excuse me, another comment on this thread has reminded me that I need to watch everything Satoshi Kon has ever made. Good day.
It's not about me wading through the shit. It's about me asking other people what gems they have found in a particular genre. They way I see things is, why watch something you don't like. I'd rather spend a bit of time in a forum specifically looking for something promising than randomly looking for an anime that I'll drop after the 4th episode. I might be putting too much faith in people to find exactly what I want, but I'd at least like to try.
I don't know, I've grown to enjoy the process of discovering and rejecting shows. I think it's a vital part of the process. Then again, I also watch a reviewer to make sure I didn't dismiss a show out of hand based on its artstyle or subject material, though this season I haven't really missed anything I've actually enjoyed.

Seconding Steins;Gate as it's one of my top two favorite anime and you've already watched the other (Madoka Magica) Nevermind, you already saw this

Attack on Titan is also quite good. And, unless I'm forgetting something, absolutely no fan-service to boot. The first half of the first season starts off really strong, unfortunately the second half is a little slow and disappointing. Main character kind of sucks, but the supporting cast is strong enough to make up for it.

I'll also throw in a recommendation for Baccano. It's not exactly the greatest, but I found it fun and interesting. It has a very nonlinear storytelling and you spend most of the anime trying to piece together what happened.

RahXephon, it's a super robot anime that can be summed up as "Evangelion if it made sense". There's plenty of mystery in it as the characters try to find out what the aliens are and how they are connected to humanity, all while conspiracy abounds within Earth's forces.

One thing that's funny though is they used the Mayan calendar before it was cool (the show is from about 2000/2001ish) so the date is off by about a week for when it happened.
I was looking into Mecha anime a little while ago and noted this one looked interesting. I was deliberating on whether I was going to check it out, as someone who came so close to liking Evangelion (ended up hating it) I think I'll give it a look
I'll go ahead and take a look at RahXephon, Shingeki no Kyoujin is AoT I'll go ahead and edit my post so it says that. I am in fact following the manga and anime for that series in particular.

Well, since I see Kokoro Connect on that list, may I suggest the first season of Haganai: I Don't Have Many Friends? Talk about your "harem subversion no jutsu"... Just only go into the second season (Haganai NEXT) if you want the subversion to be a bit more stronger... (And I guess I can't suggest the original Tenchi Muyo OVA, given how at least two of the female characters give off that "this is a harem series" vibe basically right out of the gate...)

With that said, I'll just echo other things that have been said already [and then some?] like anything from Shinichiro Watanabe (including Space Dandy, I guess?), Eden of the East, Afro Samurai, Shin-Chan, anything Ghost in the Shell-related (except Rise), Baccano!, RahXephon, Monster, anything .hack-related (especially Signs), and, especially, anything from Satoshi Kon...

NOOOOoooooo. "I don't have many friends" is exactly what I am trying to avoid. Meat alone is responsible for 70 percent of the ecchi and sex jokes. Kokoro Connect is mentioned because it has/is psychological.

I've watched Eden of the East, it isn't mentioned because I didn't enjoy it as much as other titles. Can't get into Afro Samurai for whatever reason, Shin Chan might be something I watch if I need to laugh though I don't usually want to laugh. Dropped Baccano because I was getting bored with it. Finished MOnster, will proceed to watch RahXephon. I really want to get into .hack, but for some reason I keep wanting it to be SAO.

I didn't see Hellsing Ultimate or Fate/Zero on there, so I'd have to recommend those two.
In regards to the Fate/Zero and the Fate Franchise in general, would I have had to play the VN in order to understand the fateverse? I had a friend who said they watched it and it was evident that the director made references to things that were in the VN and cut some things out so it became confusing. Unless it was another of the Fate Stay Night. Just need clarification.

If you want to watch an ongoing anime that just released this summer (July) and don't have any problem waiting a week for another episode then I highly recommend:

Akame ga Kill
Zankyou no Terror
Tokyo ESP
Barakamon
Gekkan Shoujou Nozaki kun

First four are pretty fantastic if you are into action/psychological.

The last two are very funny comedies.

PS/Edit: I removed AZ and Tokyo Ghoul because you had them on your list.

outlaw star. It has only one fan service episode and that even makes since in the plot.
I would also recommend gundam wing as its from the 90s so the animation is decent and the writing made me fall in love with the series:)

You don't need to worry about the previous shows or VN of the Fate series to enjoy it. Fate/Zero was never a games, but rather was based off a light novel. It explains everything you need to know about the series in a first episode.

There's a anime category for this guy?

XD

Seriously though I had no idea, learn something new everyday

Sadly I've been pretty behind on my anime watching so I don't have much to recommend that hasn't been said already. Fate Zero is definitely worth the watch, Fate Stay Night is ok but not as great. The Unlimited Blade Works OVA is awesome if you're already a fan of the series but not newbie friendly at all. Definitely something to look up if you get into the series, gl. :)

Has anyone suggested Escaflowne? No? Then I suggest Escaflowne. It's a cool fantasy sci-fi thing from the mid-90s directed by Shoji Kawamori (of Macross fame). Where Macross was "pop music mixed with giant robots," Escaflowne is "fortune telling mixed with giant robots." It's also the debut work of VA/songwriter Maaya Sakamoto, if that interests you at all.

The character designs and some running themes have a really strong bishounen influence, which may or may not be your cup of tea. The action and storytelling are all of the epic (in the classical sense) variety.

The opening gives you an idea of what to expect:

I've been meaning to watch Planetes. With texhnolyze however, I found the pacing too slow after giving it 4 episodes a go. In short I couldn't find myself trying to deliberate with what exactly was going on.
I would suggest giving Texhnolyze one more try. I love the show but I'll readily admit that it starts off (unnecessarily) vague, but it does pick up around episode 5-6.
