Like most, I agree with Firefly and Arrested Development. The one I'm gonna toss in there is Special Unit 2.

I agree 100% most of the tv shows cancelled after 2 months or less could probably gain popularity if they advertised more. They just arn't giving them chances anymore.

Thats what happened to Firefly. Geniuses at Fox (they canceled Firefly and Futurama huh) decided to show the episodes out of order and not advertise.

This happens WAY too often with my favorite shows, so I've got a lot to list (especially from Fox)
However, I'll just list the one that's one of my favorites and that should have gone 4+ seasons but didn't even get to finish one. Firefly. That show was utter brilliance. The movie no exception. Had Fox actually advertised for it, played the episodes IN ORDER, and not preempted the air times with Hockey games and pushed the showings to 2AM, who knows how well it would have done. It's inevitable, Fox kills every series they air that I like. Yet the ones I can't stand go on, and on, and on. This is why I only watch SciFi and Discovery.

Arrested Development, for obvious reasons.
The Tenacious D Show (well, it didn't get cancelled, HBO just didn't pick it up)
Spaced; it technically didn't get cancelled, Wright and co. just didn't bother making more stuff after the second season. Still, shame.
