HDTVs have been out for years why not upgrade they are not expensive and they do enchance the video game playing experience.
WHAT? $400 is a lot of money and that is a special offer from Amazon with $100 off. Even then, that is for only a 720p resolution screen which is pretty basic. Surely there is a better offer than that.
Money is not entirely relative, $400 is a lot of money no matter what (your parents ever teach you the value of a dollar?). If you're going to get a HDTV, if should be a group investment (family, group of friends) and at least be in 1080p. If it is just for you a fare better approach is a 1080p computer monitor of around 24 inches, that's perfect for an individual user.

Though PS2 doesn't pump out many pixels, only 480i though some games support 480p which can ONLY be reached with component-cables.

Colour will be much nicer as the analogue signals are separated by colour so they don't blend into each other. Really, if you want to keep plying your PS2 then get component cables for a HDTV.
but it won't change the actual native resolution, MGS3 will still be rendered at only 480 vertical resolution which just is not all that much detail. But there will be less interference and could enable 480p which will make it look better.
Also to note: your HDTV may just have a terrible scaling algorithm (up from 480p to 720p or 1080p), that may be solved by switching to component cables.
