Haven't played Everyday Shooter, but I must say Fallout 3 has the most mood-setting soundtrack ever. The atmosphere created while listening to I Don't Want to Set the World On Fire in the Washington DC Mall is fantastically awe-inspiring and depressing.

The music from Burnout 2.

The music stays quiet, almost unheard in the background, and then
BAM
You hit the boost, and the volume suddenly gets kicked up to eleven, with more guitars being thrown in, creating a fast, awesome song that mirrors the speed in-game.

Oh, and Guilty Gear. Can't forget that either.

Portal has the best endgame theme I've ever encountered. The tune and the lyrics perfectly encapsulate the feel of the game and the character of GlaDOS. It's awesome:

The entire Donkey Kong Country 2 soundtrack was pretty fking sweet. Especially the "Stickerbush Symphony".

Also, Final Fantasy VII has some pretty sweet songs here and there.

The Elder Scrolls series because of the amazing work that went into it
The Halo series has to be mentioned as it just blows you away
Left 4 Dead had a genius way of using their eeire music
Fallout 3 had the 1950s music which really helped to set the amazing scene of the capital wasteland

Silent Hill 2. I've never seen music and sound effects used to such a great effect. I seriously can't play that game, it scares me shitless.

I really like modern soundtracks and all that, but for pure honest-to-God awesomeness you can't beat the MegaMan series. Get the demo for MegaMan 9 if you don't believe me.

Since it is my duty as an Oddworld fanboy, I want to mention the constant high standard of music in them. Particularly Stranger's Wrath because I love the old western twist to it.

Deus Ex had perhaps some of the best instrumentals ever... Each piece uniquely set the mood for its respective level, from slow-paced sneaking to those "oh, sh*t!" moments when you had to pull out that assault gun and get your hands dirty. Some of those conversations were much more moving when you had that orchestra accompanying you in the background.

Fallout... (1, u n00bs!) The use of "Maybe" was flawlessly executed in the intro and ending. Seeing the Vault Dweller being exiled from the people he fought so hard to protect with only the company of The Ink Spots actually brought a tear to this old cynic's eye. It left me dazed. The background music, combined with some of the greatest dialog ever conceived in a game made it one of the most immersive experiences ever. Bethesda's use of the era's music felt rather... tasteless. Fallout 3 was the kind of kiddy-shooter where you were expecting the entire soundtrack to be composed by Slipknot. If you remotely enjoyed Fallout's atmosphere I'd recommend checking out Voytek Pavlik. Castle Crashers anyone? The songs perfectly fit the levels and bosses, and are actually better than most commercial electronic music.

Also, I liked a few songs from FFVII. Particularly the song that plays in Cosmo Canyon and one part of the World Map song, I think you can guess which part (the epic climax of awesome).
