Anything I can hum too which is just about every Nintendo game and Rock N Roll Racing because they play Black Sabbath and Deep Purple songs.

There is a LOT of good music in games... and heaps that I've purposely searched the internet and downloaded just so I can have it.
Certain titles seem to keep re-appearing for me and this is obviously due to the composers behind them
Nintendo ones (especially Mario and Zelda) - Koji Kondo
Final Fantasy - Nobou Umaetsu.
MGS - Harry Gregson Williams
Rare games... but they have had multiple composers.

I'll start a little list of some favorite songs... Gusty Garden Galaxy, Attack on Dollett, Encounter (MGS1), Snake Eater, Stickerbrush Symphony... I think you get the idea...

You love Oddworld!? I Love Oddworld too!! Though I must say, I thought Strangers Wrath was the weakest link in the Oddworld chain. Abe's Exoddus was best. Brilliant music throughout though. Sets the atmosphere perfectly.

metal gear solid series, several final fantasy games.

EDIT: also, mirror's edge had awesome music. And one people have missed, tomb raiders 1-3. Exceptional.

The 3D sonic games, specifically Sonic Adventure 2.

Valve stuff, all their music is epic.

Metal Gear Solid, especially some of the tracks in the Special Missions expansion for the first game.

Call of Duty 4.

Hmmm, a couple of games. Half Life 1 and 2, music that pérfectly fits with the thing you're doing, like that chopper chase with the airboat, or the spooky Ravenholm entry music. It's the turbo-boost for the adrenaline pump ;) Then we have Halo, also a perfect atmosphere setter, really makes it feel epic sometimes. There is also WoW, especially WotLK, I kept being blown away by there theme and ambient music, pérfectly setting the atmosphere in any given zone.
A special mention is given to Rayman 3 Hoodlum Havoc, for having the most epic minigame/bonus stage in any game to date, seen in this video [http://www.youtube.com/watch?v=iTl4_qTiKVA&feature=related] when you zap to 1:59. I mean damn, that's just pure funk man, imagine playing that level with a magic mushroom, wooooohoooo! 3:57 Is spaaaacyyyyyy!

Zelda (all), halo, katamari, jet set radio future, Guitar hero series, spyro, metal gear solid, LOTR TT, the adventures of jack sparrow (only played for the music) and dynasty warriors/samurai warriors.
EDIT: sure theres more aswell.

Pretty much tied between FF6 and 7, both of them have some of the most memorable tunes ever in a game.
FF10 gets a special mention on account of the metal final boss song. :)
