I hold Need for Speed 3 as having the best soundtrack in all of video gaming, but I would also give honorable mentions to LittleBigPlanet, Braid, and everything in the Orange Box.

Guitar Hero and Rock Band games definitely. Also, The World Ends With You has an EXCELLENT soundtrack.
And Crash Twinsanity. Can't beat 'Doo doo do do do do doo doo do do do do' over and over. Seriously, not being sarcastic, that stuff is awesome.

Ever since I first heard it, I fell in love with Chrono Crosses soundtrack. It's a shame every RPG doesn't have that sort of care put into its' music.
I also highly revere Silent Hill 2-4's soundtracks.

I find that video game music tends to be a bit mindless (I once tried to download all the FF music and play it on the piano, which ruined it for me because the music has no soul D:), but I really enjoyed the music Katamari Damacy, Shadow of the Colossus, Bioshock, Okami, and oddly, the original Pokemon series (the worst part is that they're loops, so if you try playing them on the piano, you go on FOREVER). I liked Golden Sun: The Lost Age's soundtrack too, but maybe that only works on GBA because I couldn't stand Star Ocean 3's music.

First is the Halo series. Second is Fallout 3 because I always played my own music over it (it made for the fun times). There was something very satisfying about clearing out the Enclave base and all their camps while listening to Indestructable.

I dunno why i liked this so much but in bioschock when you can play the jukebox in the sander cohen section - where the woman sings "How much is that doggy in the doggy in the doggy in the-" xD

Megaman, Megaman X, the original Star Fox, Final Fantasy VI.....Yeah, pretty much every game from the 8-bit, and 16-bit eras. I also love some musical scores games have, Halo, Gears of War(the first game had my favorite music, shame they changed the composer for the second game), and Prey to name a few.

I loved the music in Bioshock. Killing splicers to "The Nutcracker's Suite" just felt so epic to me.

EDIT

I also really enjoyed the music from Advent Rising. Which, in my opinion, is a very underrated game.

Theres a LOT of games mentioned here that i completely agree have awesome music, but the first thing that popped into my head when i read the title of this thread was the start up song from silent hill 1 (and therefore also the end credits of silent hill 3). It just suits it so well and sounds great.

I'd say the MGS series, Mass Effect, and my favorite would be the music in any Command & Conquer games done by Frank Klepacki (Hell March ftw).

I really dig the music from Wind Waker. The Dragon Roost Island theme really mellows you out.
