Xiahou Dun from romance of the three kingdoms (and dynasty warriors) hands down; shot in the eye by an archer's arrow made a bit of a speech about it being a gift from his parents and so he couldnt waste it(the eye that is), pulled the arrow out complete with his eye still attached to it and proceded to eat the eye off of the arrow to the horror of the enemy around him.

Okay, I got a little silly there, but the Master Sword and its bearer are so iconic in the videogame world that they get my vote for #1.
Second Favorite, Citan Uzuki from Xenogears... why? Because prior to getting the sword he's a middling fighter with some healing skills, then he gets his sword and becomes the most freakishly powerful character in the game that isn't the main hero.
Third favorite would be Xianghua from Soul Caliber, I just love her chinese opera dance style sword play, too cool.
