X3 Terran Conflict had the best graphics for a space based game.

F.E.A.R. for it's time was really great for graphics.

Crysis also had great graphics for it's time.

Far Cry 2 on the PC was exceptional.

Fallout 3 also deserves a mention

I have seen some questions here on the line of what do I mean beautiful. Well it don't have to be realistic or anything. Crysis was was realistic and pretty nice and whoever designed it probably actually wants to be a gardener but it's not beautiful to my mind and Bioshock was also nice but dark and gritty. NOTE that it's my personal opinion.

valkyria chronicles has a certain beauty to it, without the greatest of graphics.
uncharted 2 is the best graphically that I've played recently

Crysis for FPS and Empire Total War for RTS. There are plenty of others, but those are the first two that came to my mind.

The Forest and The Path from Tale of Tales are both beautiful, although The Forest is a rather silly game. Can't explain it exactly, and it's certainly not the most advanced engine, but something about how the Forest looks, and the characters too, is just awesome. Ive appreciated art in many games, but those two are the only ones where Ive taken a step back and gone, "Damn that's gorgeous"
Have you played Fatale yet?
Its a little... Well, it is a bit formulaic, but lovely and a good experience, nonetheless.
The end is a little blinding, but its a sort of realism to consider.

Halo 3. 'Cause light bloom gets me hot.

Apart from that I'd have to go with MW2 maybe, it looked amazing, especially the second mission. There are other games that LOOK great in trailers like Killzone but turn out to be just generic and awful when you play them. MW2 at least has a lot of settings, from snowy mountains to deserts to that awesome oil-rig mission.

I really liked Prince of Persia's style alot. Other ones that come to mind are Mirrors Edge, Assassins Creed 2, Far Cry 2.

Also Wipeout HD looks incredible. There are some screenshots of that game that just blow my mind.

That new James Cameron's Avatar: The Game is pretty good looking. Not the best, though.

I must say that looks like it would be pretty awesome to play in 3d

Don't know about in 3D personally.

It's okay to play. I rented it. It'd kinda hard to see human enemies if you chose to play the Na'vi path, since they're shorter than you and...not 10 feet tall and blue. Human plays as a shooter, Na'vi as some kinda guerrilla melee fighter.

Decent gameplay. Nothin' new or bad.

In terms of composition, art direction and actual execution, I would say Flower on the PS3.

I have played Fatale...sadly, I was curious enough that I didn't wait until it came out on Steam. Ah well, bigger percentage to the indie devs.

Personally, I felt that Fatale has been there weakest game yet. They are great at aesthetics and art design, but there game design leaves a lot to be desired. I understand that they purposefully keep the game play to a minimum, but there are techniques and mechanics they could have utilized which would have enforced the strength of the game, rather then making it feel like they shoe horned the game part in out of obligation. The Forest is basically a screen-saver, so lack of game play isn't a big deal, and in The Graveyard, the lack of meaningful play is the entire point. I disagree with how they approached the intentional lack of choice, but it at least the game mechanics and dynamic enforced the games aestetic. The Path came much closer to a sense of meaningful choices, and the art design itself was their best by far, which is why I had such high hopes for Fatale. However, it felt like the game design choices were specifically there to inhibit appreciation, and the sense of wonder and exploration of The Path gave way to a static, unchanging environment of Fatale. I'm afraid I may have missed a good deal of Fatales point, what with not being terribly familiar with the story of John the Baptist, and never reading the Oscar Wild play. So really, the worst criticism I can give is that the game doesn't stand by itself, but could be a good complimentary piece. I don't regret the 7 bucks I spent, and definitely Fatale has a high ratio of beauty to explorable area, but their other work blows it out of the water by being a much richer (Or starker) environment, with a much greater breadth.

Wow. Goddamn I'm a nerd.

I agree, it is one of the best looking games I have ever played. I have to say that Bioshock is up there as well, it's a fantastic piece of art.
