For me its,
-The UI is a bit weird and bland
-From the videos ive seen the majority of the environments seem a bit grey and gritty compared to the lush green environments i loved in oblivion
-im not sure about the finishing moves in combat that you have no control over (there sort of cut scene type things)
-The way the health mana fatigue bars are layed out and how big they are (i suppose that comes under UI)
All I can think of right now, it still looks amazing and i'll be picking up my preorder on 11.11.11

i've seen the 1st 20 minutes, and it even exceeded my expectations, people seem much more real, farther from the uncanny valley than fallout and oblivion. I'm extremely shocked, as it's better than i hoped.

i find it more to my liking each day.

I'm a little worried about interface too, especially the whole "No, there isn't a cast button anymore. You have to equip it."

I'm going to buy it anyway as these are minor worries, but I was worried that there might be too many dragons, I like that they're random encounters but I don't want to have to fight one every time I'm travelling somewhere. Also the enemies still don't recoil or anything when you hit them with a huge axe/hammer etc.

this isn't worry so much as why I wont get it for launch. I'll wait for the GOTY version. I've got a backlog of games I've yet to finish anyway.

Nothing. Nothing at all. Everything I've seen so far showed nothing that worried me. I'm sure I'll have a great weekend doing nothing but playing Skyrim come the 11th.

The only thing I worry about is getting my ass burned off (which is a shame because I've grown quite attached to it), when a random dragon shows up or when I see two fighting each other. That's when I will hide shield myself, cry a little, and roll around in the fetal position behind a rock until it's over; other then that I really see no problems but I too am rather curious about the execution/special kills and how they'll affect the combat and control.

I really wouldn't worry too much about the grey and gritty environments, Bethesda normally pulls through and besides all the towns, dungeons, and houses; there will be something like 115 locations to travel to alone so there should be some variety.

Not Really a Worry but more of a Deep thought,

If there are Vampires in the game, are there Werewolves? I mean you can't have one without the other, so it only seems natural to think and wonder.

The finishing moves were in Fallout New Vegas (and a little in fallout 3) and I'm pretty sure (%80) they could be turned off. So no need to fret too much. I won't mind them at all unless I die during it OR it glitches out and it just stays in "killcam" mode.

The new leveling system, the lack of classes, the changes to the ui, the removal of stats, the kinda watered down mainsteam-y-ness of the changes to most of the above, and the century-plus time gap...

There are vampires in the game, i doubt there will be werewolves because the games finished now and if they did put warewolves in they'd say so to create some more hype.

I can't say I really worry about it per se but... I sure hope Skyrim isn't as dull as Oblivion.

Anti-Twilight fan rant aside, you can have one without the other, but at this point I will not be surprised if Bethesda pussies out of this one. First of all there were supposed to be were-lions in oblivion. Second, in Skyrim it's less werewolves and more were-bears. Third, Oblivion so royally screwed the pooch lore-wise that they could have vampires that sparkle and I would not be surprised...

I'm just going to be "that guy" and say all the problems you listed can, and most likely will, be fixed through mods.

Personally I can't think of anything that has me worried at the moment.

You can probably turn finishers off, like you can in Fallout:NV.
I love the UI, ecept for the HMF bars.
