Elfin Lied no question. . . also one of the best anime :)

Edit: hmm haven't seen Higurashi no Naku Koro ni I'll have to check it out.

Elfen lied is the only gory anime I have seen, so I have to go with that. Although I am sure there are worse.

EDIT: I suppose that is incorrect with hellsing as my avatar, but we will ignore that.

OT: hellsing ultimate or just normal hellsing aswell.

Unless you want more comedic violence, go for Bokusatso Tenshi Dokuro Chan.

Elifen Lied if only for its Gore.
Didn't find it all that good.

Gantz is also a really really Violent anime.

The only other thing i can think of is Berserk.
Though i would suggest the Manga.
Its brutal.

EDIT:and if you have no problem with Manga then Toriko is a great Ultra Violent series.
It gets pretty gory and the main character is completely wacko.

and that is all I have at the moment.

EDIT: Oh and the new anime Highschool of the Dead is also looking to turn out pretty damn violent aswell (along with those great big stinking hooters and fanatical fan service)

Same reason some people like Ecchi Fanservice or Slice of Life anime.
Different Tastes.
I love a good fight, and i love it when the fight ends with (example) one guy cut in half with his upper half pinned to the wall by his opponents sword(see Rurouni Kenshin)

Let's see... There's the Beserk Manga, Hellising Ultimate, Elfen Lied.
That's all I can think of right now, but the Helling anime is a big 7 hour long (not done yet) gore fest.
