Ed Edd n Eddy. That was the most awesome show of my childhood. It was like a modern day 3 stooges.

Without a doubt, Loony Toons. Every other cartoon I've seen has shown its age or will, and stop being relevant, but Loony Toons is just as timeless and funny today as it was 40 or 50 years ago when it came out, and i'll eat my shorts if it's not still just as funny 40 or 50 years from now.

A close 2nd runner up would be South Park :p

Oh my dear sweet lord, I loved that show. That was a great era or Cartoon Network. Ed, Edd, and Eddy, Johnny Bravo, Dexter's Lab, Powerpuff Girls (come on, you know you thought it was funny), and more I can't remember off the top of my head.

Off the top of my head, it's a 4 way tie:

Megas XLR

Invader Zim

Samurai Jack

Tom & Jerry

I don't really want to choose beyond that, as I think those were my major highlights from my childhood.
Essentially all of that, except instead of Invader Zim, I'd put Ed, Edd, N' Eddy.
all of that and NGE up until the last episode

WOOOOOH! I love Dragonball Z! It is the awesomest cartoon ever period!

...Damn nostalgia, crept up on me!

OT: Invader Zim. Magnificent with a capital M.

Followed closely by South Park, if that counts.
Nothing beats half an hour of men with muscles bugger than their heads twitching and shouting.

Which (mysteriously) reminds me, Fantasia kicks ass. Night on Bald Mountain is one of the most brilliant pieces of music ever.

Avatar: The Last Airbender, hands down. But special mention goes to the following: Samurai Jack, Gargoyles and Megas XLR, as well as Looney Tunes and the DCAU.

Fairly Odd Parents - it's one of those things that is just too good for it's target audience.

And

Not strictly a cartoon but claymation, Trapdoor.

Showing my age now

I don't know about just one... but the first cartoons that came to mind were: Sam and Max: Freelance Police, Freakazoid, Animaniacs, the original Sonic the Hedgehog, the original TMNT, the original Batman, Invader Zim, Futurama, Cowboy Bebop, Trigun, Reboot, and The Tick.
