The fact that the whole movie explores what this means and yet we never know... the significance of this one innocuous word, is what wins it for me.
I'm pretty sure the movie ends with a reveal of what it means. Sure, there's lots of interpreting to do for why he chose it as his dying word, but at least we know what kind of significance it had to him.

i know it's hamlet, but the way it's delivered and the build up to this part of the film is brilliant. it's crushing in a beautifully sad way.

Purely because it's a beautifully written line plus no one remembers where it's from even though the movie is iconic.

I know I'm not thinking far outside the box on this one, but the Dark Knight did have some truly legendary lines in it.
"The thing about chaos? It's fair."
"Madness, as you know, is like gravity. All it needs... is a little... push."

These lines just come out of left field with their simplicity yet profound meanings, and I love them for it.
