I know I'm a horrible person for this, but the Halo theme music.

A lot of games have really good soundtracks.

I hardly think likeing Halo's music makes you horrible. Whether or not people like the games, you can't deny that they all have exceptional soundtracks. Halo 3, in particular.

For my favorite game music, I have to say Mega Man 2 is my absolute favorite. If you haven't already, I strongly recommend checking out a band called The Megas.
I've always been at a loss as to whether I like FF7 or FF8's best between the two. 7's is definitely more memorable and nostalgic, but 8's is unbelieveably well orchestrated and is just as memorable.
Other games/series with great soundtracks would have to be the Ace Combat series, Phoenix Wright, Gitaroo Man, Silent Hill, Zelda, Metroid, Metal Gear, Fire Emblem, Chrono Trigger/Cross, Xenogears, Castlevania, Parasite Eve, etc.
